      Ok let me explain about the flour. Clean keto flour ingredients are bamboo fiber, Gelatine, egg white protein and the last ingredient is your choice. You can use a nut or meat flour like Almond, lupin or chicken flour and you will need 360 grams.
      I'm glad you found my channel, I have all sorts of recipes for bread and pasta, and meal propping is a great tool. All the best and let me know if you have any questions 😊😊😊

    Hi Mel, thanks again for your creativity with everything keto. Love your channel. I’ve made the peanut and tahini bread and they were pretty good.
    The ck flour bread makes me feel like pouring gravy over it. It’s like a chicken meat loaf, but it is good. I will try the flour mixed with almond flour next. Thanks Again 🙏🏽

    Hi Mel would you please send me a list of all the ingredients for your almond blend flour, I bought a Pullman loaf pan and All the ingredients, but it was a disaster I used just straight almond flour it mixed up a real liquidity batter, help me PLEASE it is such an awesome easy recipe from you I need to not have another failure.😢

      Hi Sure. Please note I always list the ingredients in the description box (not sure if you know)..here it is:
      CK Almond Flour Blend Ingredients:
      360g/3 cups Almond Flour
      60g/1 cup Bamboo Fiber
      80g/1 cup Egg White Protein Powder
      48g/5 tbsp Gelatine Powder
      I think you will get great results if you use the CK flour instead. Everyone who has baked it loves it :)))

    Mel, have you tried using the water called for and heating it and blooming some yeast? I wonder how that would change the flavor?

    questions: How long does it keep? Can you grind it up for bread crumbs to make a coating for fried chicken? Can you slice it and fry it? It sounds so easy to make and no hard to find ingredients. I have fatigue issues so easy is important to me.

      Hello, I wrap mine well and refrigerate for up to 3 days or freeze. The answer is yes to all 3...make bread crumbs, croutons, slice and fry. Thanks 😊

    Hi Mel, we just loved your chia bread. My teen son LOVED it. So we want to try this but can i use egg white powder and just add liquid to the powder to make it like egg whites and then add to the mixture? Thanks so much! Hugs! Jen

    I must pull up my boot straps & get some chicken flour made!!!
    I am SO excited to try this!!
    I am sensitive to almonds after 4-5 yrs eating a LOT of almond bars, treats & almond flour things so I am praying this is going to be my road back to bread!!
    Do enjoy Nili's ew bread but it is more picky than this bread looks.

      I agree, Nili’s bread is much more fussy. I actually got rid of all those PSMF bread recipes.
      I’m a vegetarian who is a bit concerned about becoming sensitive to almond flour! Thanks for telling about your experience

      Hi Becky...it's totally worth the effort. All my baking has turned out amazing so far.
      I wanted a very easy recipe to share so everyone feels they can make it, so I do think this one is easy. We don't even need a mixing machine whereas you have to whip for some time with hers.

    HALLO MEL, I have watched and saved most of your recipes but am totally confused if you are primarily a talented cook or a natural comedian with a gift for hilarious facial expressions. Also a great strangled chicken impression before you turned it into flour. But, I have a serious complaint Mel as I get so absorbed by your comedy antics that I always forget to concentrate on the cooking so I have to repeat the vid for the ingredients, quantities, and method but I forgive you as all your food is lekker.

    HI Mel!
    I baked this bread and it was very good. :) However it was wet in the middle. Next time I will dehydrate it in the oven. Should I leave it in the pan (lid on or off?) or put it on the wire rack?

    If we use ground chicken, do you just start with the raw chicken in the oven and dry it out good, then grind it to a powder?

      I actually haven't tested this recipe in a bread machine. Something to do down the road I think. On second thought I would like to test a traditional bread machine bread recipe because that will have yeast in it.

    I wonder if I could add vital wheat gluten. I want to use my supply up, but don't want to mess this up. I made the chicken flour with the microwave method and it took all day to get it right!

      This one would be perfect to use. Just replace the lupin flour with CK.

    I want to make this as protein sparing. To do so, I need to remove the butter. Does anyone have a suggestion for replacing the butter - egg white, water, something else?

      @@CookwithMel1 Thanks - no, nuts aren’t allowed on protein sparing. I’m going to have to do some experimenting it seems with the effect of water/egg white/ combination does as butter replacement. I’ll use the version with butter on regular keto days.

      There's not much butter in the bamboo/CK flour blend. I bet the macros would still work for PSMF. :)

    Hello, I made the bread with the almond flour version but I must have done something wrong because it didn’t look like yours and it tasted like a loaf of egg, the inside looks great but while baking it got gigantic and then deflated,any suggestions as to what might have gone wrong?

      Hello. Sorry if it's obvious but did you add the correct amount of ingredients? It just sounds like that's the issue.
      One time I did mistake baking powder for powdered sweetener and that was the result.
      You could also use egg whites if you're afraid it will turn out eggy again.

    Ok. I just made this bread, almond version of clean keto bread with bamboo fiber. Followed directions exactly. I read her suggestion in the comments stating to leave the bread in the oven, an additional 30 minutes, door slightly ajar, oven off. It came out looking perfect. ☺️ so now the taste part. Some parts of the bread was still wet/moist. Those parts reminded me of egg. Other than that, taste of bread was 👍🏼 good😁. Next time, I will leave it an additional 10-20 minutes. The top did not burn or get browner. This is the first time ever I have naked bread. So proud of myself.

      In order to achieve a desirable browning effect, it is suggested to substitute monkfruit with Alulose or use a combination of both, as long as allulose is present. Allulose has been proven to effectively brown baked goods :--))

    New day, new attempt. And more questions. Why is my dough much more liquid than in the video? I mix by hand! Why is my dough darker (with almond flour) and much greasier than in the video. I did everything 1000% as directed and this time covered it with foil while baking and let it cool overnight. It looks so easy in the video. Now I'm really disappointed in myself. But I won't give up. I am grateful for every tip and advice.

      The main question is...how did the bread turn out?
      Your bread could be more liquid because of the time lapse when filming. If you let the batter rest I think it will thicken as well. However, when I baked this bread (without filming) it turned out great. Whole eggs vs egg whites will affect the color but not the taste. I would like you to enjoy the making process as well as the bread and it sounds like it's upsetting you more than anything.

    Mel, while this is an absolute great recipe, I spend so much time in the kitchen cooking all of my keto foods from scratch, that I do not want to go through the time, and the process of making dried chicken powder for this recipe, and I refuse to purchase the expensive chicken powder. It would be wonderful to see a similar recipe with bamboo fiber, fine almond flour, egg white powder (or liquid egg whites) Yeast. I've been living a ketogenic lifestyle now for over 4 yrs and i'm still looking for that elusive perfect white bread recipe that provides a taste and texture close to a good regular white flour bread. I keep working on it though. Ty for taking the time to put this together and share it with us.

    Tested this today with almond flour and my batter get really loose in my food processor but i baked it anyway and it didnt get cooked at all at 50 min and i follow it in grams and double checked it now so it was correct, And why write 1.5 dl water are 335 gram and you say 1.5 cups in the video

      I just made this recipe. Not sure what went wrong but it looks nothing like yours. Took it out of the loaf pan and noticed that it started to fall. I cut into it and noticed that the underneath was very wet even though the middle was dry. It did not rise as much either, I thought it would given the amount of baking powder. With ingredients as expensive as they are, I won’t make it again.

      Please put it back in the oven and let it rest in the warm oven. It could be that your oven lost heat when opening it and the bread just needs longer. Let it sit in the warm oven for 1 hour. Could you please let me know if it works? I will stay online.

      Sorry to answer your other question. It is necessary to cover the dough. Kind of like sourdough baking you are creating an oven within an oven so to speak.

      I haven't had to do this with CK bread but have with other recipes. After the bake time, turn the oven off and let the bread rest for an hour in the oven while it cools down. Probably only relevant advice if you try it without my pan. Thanks Gaby ❤️

      I'm so happy you finally got my favorite loaf pan. The wait time in the oven is just to ensure the bread dries out. I say check the bread on the inside...if it's dry then you don't need to wait.

    This was a bit of a fail for me. I used the recommended 3 cups of almond flour, but it came out very wet. I used the Pullman pan, but wonder if I should have left the lid off. The taste is good though! I may try again with less water, and leave the lid off. Meanwhile, I’m “ toasting” the bread in the oven.

    Instead of egg whites can I use the egg yolks for my second loaf because the first loaf Im gonna use the actual egg whites but the the yolks I have left can I use those for the second loaf ??

      You need to use whole eggs or just the whites. I have the amounts for both in the description box 😊😊😊

    Mel another question how many large eggs makes 8 egg whites and also I don't have any baking powder could I use baking soda instead and get the same result ?

      Hello, please check the description ription box because I have listed all the ingredients with weight measurements. That will probably be more accurate. I haven't tried it with baking soda but I also think it would work 😊

    Why do I feel that the “total” in ‘zero total carb’ is hiding something? Is it really zero carbs or not?

      It's zero net carbs. I have asked my husband to correct this, I'm do sorry. The amount of fiber is the difference

      The batter for the almond flour turns out more watery than the chicken flour batter...but the bread turns out soft...so yes
