    Do you feel like you're constantly having to choose between pie and cake? No? Well, in any case, we still have the recipe for you. Grab those summer fruits that are ripening on your countertop, because today Molly’s going to demonstrate the most delectable way to put them to use. Jammy fruits get surrounded by a buttery cake batter, and then everything gets topped with homemade Frosted Flakes. Baking the pie cake in a cast iron skillet allows the batter to turn crusty and crunchy at the edges while leaving a tender, cakey middle, which results in what can only best be described as: pie cake.

    Ingredients :
    PRODUCE
    24 ounces mixed ripe summer fruit (such as plums, peaches, nectarines, apricots, blackberries, blueberries, and/or raspberries)
    PANTRY
    ½ cup plus ⅔ cup granulated sugar
    Kosher salt
    ¾ cup all-purpose flour
    ½ cup almond flour
    ⅓ cup fine cornmeal
    2 teaspoons baking powder
    ⅓ cup (packed) brown sugar
    2 teaspoons vanilla extract
    1 ½ cups cornflakes
    DAIRY
    1 ½ sticks unsalted butter
    1 cup plus 2 tablespoons whole milk
    Creme fraiche, vanilla ice cream, or whipped cream, for serving

    I already made this and it slaps. I decreased the sugar by 1/4 cup and used all brown. I didn’t have cornmeal so I used more almond flour. And added a little lemon juice to the fruit filling. It was SO GOOD.

    We made it last night as well. Holy crap is it delicious! I used dragon fruit, blueberries, raspberries, fuji apples, strawberries, and blackberries. I also used cinnamon chex for the cereal crunch. Yummmm!!! I didn't have to use sugar in the topping and was able to make it vegan by using veg oil instead and cashew milk. I also didn't have almond flour & used tapioca starch instead. Such a wonderful texture. I'm now playing with a recipe for vegan cheesecake with a texture like this. Thank you for the inspiration and FANTASTIC food! ❤

    I’m making this soon! I have peaches, pears, and berries to use. I’m glad you noticed at the end that there were no contrasting colors in the kitchen segment. Too monotone. Lol!

    If you can't have almonds (or any nuts or seeds), what swap would you recommend for the almond flour?

      You could likely use any other flour, cake flour would likely be the lightest - it seems like the almond flour was more of a flavour choice than a structural one.

    I purchased Cook This Book. And I’m here to say Do. Not. Cook. Her. Book. Her recipes do not taste good. She’s trying too hard to be unique and different that it the recipe becomes a mess. Her hot takes are too far off that it should be called not takes.
