I'm in Southeastern NC supposedly outside of the 'hurricane zone', but Mathew and Florence showed us differently. I grew up and lived most of my adult life in the Norfolk/Va Beach VA area. So no stranger to hurricanes. We tend to let our freezer run 'low' in July till Nov. Just fill the holes with bags of ice. My grandma canned her garden, right down to her asparagus. I wish I paid more attention to her when I was a teen. My mom didn't can, but she did a lot of scratch baking and cooking. I keep telling her take the plunge and can, if I can do it you can too. I'm seriously considering buying her a couple books for her retirement gift.
My Grandma used to can ALL kinds of vegetables and fruits...but never canned any meats! This was very interesting Greg! And makes perfect sense for emergencies like Hurricanes or Earthquakes. Thanks for showing us how to do it!
I have not never done the hot pack pork Greg I think I would like it better than the cold pack because some of the fatted melt off as you cooked it and you could also pull more of it off as you put it in the jar thanks for this one it just gave me better ideas.
Greg this brought back some memories of my Aunts who would can like they were in a depression :). unfortunately, I have never canned anything and never acquired the skill. I wish I had learned from them.

why didn't you wipe down the top ring of the jar to get off any grease/residue and to re-check for nicks on the top of the jar. My mother would yell at me if I didn't do that. Just curious. Sorry - I didn't see you do this on the first one.
I actually forgot to wipe down two jars and restarted the video and re-did those jars. Unfortunately in editing I use the first clip instead of the second which I did wipe them down. That was a good catch and I will make sure to always put that in my explanation. My mom will kill me too when she notices that
@@gregscumberlachiakitchen I know my mom would have made me start everything all over - re-sterilizing jars/lids. I hope you didn't feel like I was "yelling" or some kind of authority on this. I just know how I was taught and the steps have to be followed to ensure you have great products. Thanks for the video - I enjoyed it. Especially the "boom". Can't wait for more. Have a great day.
I can meats also but have been hesitant to pressure can meat that has been cooking in a slow cooker. I am concerned that pressure canning slow cooker meat will turn it to mush. Your pork looks good. How is the consistency after canning? Does it hold together well? Thank you!

Nice video but I'd like to know where in the FDA guide you found instructions for pulled pork? I found instructions for Strips, Cubes or Chunks of Meat but not shredded. When I checked further, I have heard that because of a heat penetration issue, shredded is not recommended. I thought maybe they have changed their viewpoint and have instructions for shredded pork now. I'm hoping so. Anyway, great video.

So far I’ve only raw packed meat. Even though I know people can cooked meat all the time I haven’t been convinced that the texture is good. I guess I need to at least try it. Maybe I can have my son smoke a shoulder and can it in stead of freezing it.

It is quite easy and I find it so satisfying preserving my own food and knowing what is put into it. Plus I have food security when I need it.

It turned out very good. I too was initially concerned it would be mushy but it’s texture barely changed that I could notice.

Friend scared me. Mine wasn’t smoked but I have canned smoked ones before and they turn out well too. Let me know if you can it.
