I'm rather jealous, and wish I was just sat with you in the open air, supping a beer or two, watching it cook.....and the feasting on it. (Although I tend to like warmer weather!) ......And I've just spotted a video of yours in the side bar with a hog roast! Guess what I'm viewing next?! Oh, what an exciting Saturday night life I lead!
What a scrumptious Easter camp meal! Nice to be able to share with Mark! The traditional grill method was the way to go for sure. The lamb is crisping up nicely. As you say, lots of meat, but why not? Leftovers are always tasty👏🏻😋

I've had a whole roasted pig twice...took all day to cook...but absolutely worth it. One of my favourite things. Can't imagine how delicious a whole lamb would be, but that looks amazing.

fabulous! I know that this dish is common in Latin America. Many years ago, I happened to see a similar method of cooking in relation to fish. I was on Lake Baikal. In this lake there is an endemic fish called Omul. This fish was cut along and placed flat wooden sticks, which are called the "рожон ,Rozhon", passed the ridge between the skin. These sticks are pointed on both sides. Fish, fixed in this way, is placed near coals, sticking sticks into the ground. From heat of coal, the fish is fried. So you can cook any fish or meat and other products. From the name of these pointed sticks, the Russian proverb is made "не лезь на рожон": do not run into trouble.
Hey Andy, as far as I know, Argentinians use the Asado cross but have never seen it before ... I'm from Uruguay, and my father used to build a fire like you do and cook it on a grill... greetings from US
Great vid. That was fun. Ever try fixing one in a pit on top of a bed of hot coals. Takes some prep. digging the hole and building up a fire a day before putting it on. Then cover it up with metal, moss what ever to hold the heat in. The meat is wraped in aluminum, foil to keep it clean, usually cut in blocks/pieces. Give it a try.

We got caught for three and a half days of rain in the middle of a 10 day canoe trip. It was really miserable having to have a tarp over the fire and constantly having to dry out everything. But the bad trips make the good ones soo much better.

As ever, you and Marc make an agreeable team. I learned from your experience with Asado cooking. A large and long bit of meat is best done using your supporting 'cross', and cooking over a long fire. The two of you sitting side-by-side in the arch of the Adirondack shelter gave me a better idea of its dimensions.
I enjoyed this video a lot. I feel like I would have enjoyed the AMSR of watching the complete dissection of the lamb for storage even more? Great stuff.
I thought surely it would be Lamb and Eggs for breakfast! LOL! Cooking that whole lamb was quite an endeavor! Another great video Andy! Cheers to you and Mark!!
This reminds me of Saturna Island B.C. Annual Lamb BBQ every July first. Except they cook 25 or 26 lambs on metal crosses surrounding a huge bonfire. They serve Lamb from all the local farmers and host at least 20,000 every year for over 60 years now. A serving of Lamb, Spanish rice which I don't like because they put onions in it LOL, and a Bun.
