In this video, we show you how to make an Orzo Pasta Salad Recipe with Grilled Halloumi. Orzo is a short-cut pasta, and its shape & size resembles rice. Orzo pasta goes really well when made as a summer salad, and the salad dressing we show you in this video is absolutely delicious. You can of course replicate this recipe with any pasta of your choice, but Orzo pasta is a great option due to its texture and size. You can have this orzo pasta salad on its own, or you can make it a complete meal with the addition of the grilled halloumi.
To make this Orzo Pasta Salad Recipe, you will need:
1 cup Orzo pasta (cook as per packet instructions in water with salt and 1 tsp olive oil)
Salad Dressing:
1 grated garlic clove
3 tbs olive oil
juice of half a lemon
2 tbs honey (or sweetener of choice)
1 tsp dijon mustard
1 tsp apple cider vinegar
salt to taste
1/2 tsp black pepper
1 tsp red pepper flakes
1/2 tsp cumin
1 tsp dried oregano
1 tsp dried basil
Salad items:
1 medium tomato
half a large cucumber
1 avocado
1/2 cup mixed capsicum peppers
1 cup cooked kidney beans and sweetcorn
1/4 cup green olives
1/4 cup parsley
half a small onion
Halloumi Cheese
This pasta salad with orzo is incredibly delicious and healthy too. It is the perfect dish for summer picnics and barbecues. Do give this vegetarian orzo recipe a try and leave us a comment.
