yep, sometimes canned salmon prices can get a little out of hand, but canned mackerel is pretty much always best bang for the buck in the canned seafood department

we're down in central Florida and we've finally got a few days of cooler weather, too--or what passes for cooler weather!...it was cool enough to have coffee outside on the porch this morning, although we still eventually got chased off by the mosquitoes
Hey Buck, I was eating some cold grilled mackerel and crackers for lunch right before watching this. You added everything I would add except for maybe sliced salad olives. The chicken stock is a big flavor booster, I add chicken bouillon to my fish cakes. I also bought an extra 2 cases of mackerel last week on amazon. I don't think Adolf will like this video but I loved it and saved it to my recipe playlist. I think you will get used to making no edit videos. Life is too short to be in front of an editor all day. Oh, if you do not have potatoes you can use elbow macaroni and make a goulash. It does help to grill the fish first and firm it up.thumbs up.
I'm enjoying the challenge of making a longer video and trying to still make it semi-entertaining and also function as a practical tutorial...I really like spending time editing, and it's actually hard for me not to edit. I smiled when I saw your clam chowder vid yesterday...it's that time of year! I'm digging this brief taste of cool weather...not sure you're getting down in South Florida, but it's been nice up here the last couple of days. I like to use canned clams in a linguine with clam sauce dish, but it has a lot of butter...maybe I'll try it with just oil...anyhoo...hope you have a Happy Halloween!

My mom always cooked up salmon cakes when I was a kid, but I was shielded from realities of what was inside the can...I remember when I was a young man and moved away from home and opened my own first can of salmon...I was like "what the....?" As soon as we get past the social distancing phase, I'd love to get together with my little nephew and make some fish cakes with him just to see his face when he opens the can :^) ...CG doesn't like me disparaging the can contents either. We've been making a lot of flatbread pizzas with canned clams lately, and making snacks of sardines on lettuce leaves with sliced tomato...we've always been fans of canned seafood, but I think going to the grocery store less often has made us buy even a bit more than we generally do. I had grabbed a big can of mackerel without looking, thinking I was grabbing a can of salmon (they were side by side on the store shelf) to make croquettes. I've always liked to have a cabinet full of canned foods, but as you say, now more than ever...I haven't been much of a frozen foods guy in the past, but I find myself buying more frozen stuff lately...I try to keep our trips to the grocery store at once every two weeks
@@ChefBuckRecipes That's the best thing to do. The less we go out, the less risk of catching the infection. Frozen, canned, dry, or pickled stuff is definitely something worth keeping besides the fresh food, to juggle between the two and have a variety of things to cook and eat! Once things go back to normal and the danger is gone, we can visit the shops and markets more frequently for fresh fruits, vegetables etc. Till then, the safe survival is better than the risky infection. Your videos are encouraging people to stay safe & make the best recipes out of what we have at home now! Keep up the good work, Chef Buck 👍😀
That looks really good! I’m going to try it. I’ve never had that fish but I have had all the other canned fish available. Canned salmon, tuna and sardines I just make a salad out of it. I never thought of stew with canned fish but I definitely will try it. Thank you for a new healthy recipe!
canned mackerel is perfect for this stew...the tomato and the lemon tame the fish a bit and the celery adds great texture...mackerel gets a bad rap because it's a stronger tasting fish and doesn't win a beauty contest coming out of the can...some folks even buy canned mackerel for their cats since it's pretty affordable
my mother in law keeps her compost in a container next to the sink...it's an old box for frozen Belgian Mini Cream Puffs, so every time I add anything to the compost, I want a Belgian Mini Cream Puff ...there's got to be a better way
Thanks!--I used to always serve this stew over rice, but over the years I've found I'm happy enough with it all on it's own...it's surprisingly hearty--even without the potato--which is an ingredient I generally don't use in this stew, I just had an old potato that needed to be used
canned mackerel and salmon are pretty interchangeable....I've gotten into canned sardines as an adult, but I loathed them when I was a kid...my dad would crack open sardines and beers on the weekend to watch football games and stink up the whole house (or at least my little kid nose thought so)
@@ChefBuckRecipes Always liked canned sardines and a pack of saltine crackers. Prefer them in oil, with some of the crackers crumbled to soak every bit of that oil. Sadly, today, I buy them packed in water to keep the calories down, when snacking.
this recipe will work with most any fish or seafood, but it's especially nice with a strong-flavored fish, especially one that's inexpensive...so mackerel is perfect...bags of tilapia in the frozen foods section are sometimes very well priced...tilapia won't be as strong a flavor as mackerel, but some folks might prefer that

BTW in both videos you add jalapenos in some form or another and Cameragirl isn't too thrilled, but you say "trust me" both times. I don't know why I found it so amusing but I do.

Thanks!...The stew can be sweeter with the tomato paste, so sometimes I don't even use the entire can, even when making a double batch of the recipe (which is what I generally make)

no joke!--I like to make "meatballs" with canned salmon or mackerel...you can make a mix of fish, egg, and seasoning just like for a fish cake, but shape them into balls and bake the "a little too much" in the oven...they hold up pretty well as healthy meatballs for all kinds of dishes...here's a meatball recipe I made with canned salmon ua-cam.com/video/oebrP1CyLeQ/v-deo.html

You don't have much liquid in there. When I make it i basically fill the pot with water. By day two in the fridge the water is already essentially gone. Absorbed into the vegetables I suppose. I chop the onions and celery in a food processor pretty finely (because thats kind of all it can do), and usually add potatoes and corn and other stuff. I make a big pot to keep it around for the week, but again, my water just totally goes away, and i use a lot more than you, so I wonder how yours fares as leftovers?

Thanks!...The stew can be sweeter with the tomato paste, so sometimes I don't even use the entire can, even when making a double batch of the recipe (which is what I generally make)

sometimes I'll use mackerel for making meatballs, but mostly I use it in this stew recipe...it goes into the meal rotation when fall comes around

no joke!--I like to make "meatballs" with canned salmon or mackerel...you can make a mix of fish, egg, and seasoning just like for a fish cake, but shape them into balls and bake the "a little too much" in the oven...they hold up pretty well as healthy meatballs for all kinds of dishes...here's a meatball recipe I made with canned salmon ua-cam.com/video/oebrP1CyLeQ/v-deo.html

I (not a chef or cook, can make more delis from more humble ingredients. sorry no.
You don't have much liquid in there. When I make it i basically fill the pot with water. By day two in the fridge the water is already essentially gone. Absorbed into the vegetables I suppose.
I chop the onions and celery in a food processor pretty finely (because thats kind of all it can do), and usually add potatoes and corn and other stuff.
I make a big pot to keep it around for the week, but again, my water just totally goes away, and i use a lot more than you, so I wonder how yours fares as leftovers?
