That was really quite bizarre ..... What a combination of ingredients...Who would even come up with that dish? I love oysters...Fresh...shucked in front of me or I shucked them....I was lucky enough to work in a place with incredible oysters depending on the season...and I spent a lot of time in Oyster Houses... That fried chicken looked great.. But, we would put it on a plate...with some mashed potatoes and gravy and vegetables or make a sandwich. Very interesting.. You sure know how to find places that blow my mind.. That soup was freaky...
This dish is a creative dish, and it can only be eaten here in Taiwan, haha. Oysters are my nemesis, I have been afraid to eat oysters that are too big XD
Hi Mouse :D that's right. Oysters you get fresh in the shell are about 1,5-2,5 USD a piece. Such packs with small cleaned oysters isn't available here. And IF, expensive like hell ahahahah 😂 Could you explain why he covered the oysters in starch and boild them? wow the soup with all toppings wasn't expensive, also the cicken steak, looked delicious😋😋😋😋
Haha, hellish prices... Taiwanese food prices are not expensive, but people's income is very low XD You are asking about Potato starch, to avoid the oysters losing their original taste immediately after they enter the water.

應該是太白粉吧!勾芡用的
是太白粉(Potato starch or Maranta starch),包裹蚵仔下熱水,會瞬間"糊化",以防蚵仔原汁流失太多。而燙過蚵仔的熱水,就是煮麵線的高湯了。畢竟是"鮮味"的來源~
此類遇熱可瞬間糊化的"粉"眾多,皆可替代使用。例如:地瓜粉、木薯粉、玉米粉、澄粉(無筋麵粉)...等等,台灣勾芡常用的,就是太白粉了。
還好有人幫我回答,哈哈,我也不太清楚但現場老闆有說可以讓麵線糊糊的,應該就是太白粉了XD
@@flyingmousefood 其實也不一定就只是“太白粉”,反正就是「裹上“澱粉”Starch」;至於「澱粉Starch」的來源可以有很多種農產品,一般多是「玉米」「薯類」,注意絕不是“滑鼠Flying Mouse“,怎不是叫“飛鼠”?!@2022.1123。
