This man just cooked a main course for a packed restaurant, by himself, in a foreign kitchen with minimal equipment and no oven, where nobody spoke English, in an Indian style that he is barely familiar with.

Asian Import Indian food is extremely popular in the U.K. he has probably made a lot of Indian dishes before.
He didn't cook for the packed restaurant. He just cooked for those so called Delhi's Finest.

Star anise is not a traditional Indian spice and apart from chefs who had some experience in authentic chinese cooking, I doubt many others knew about it 10 years back.
