    An easy 'hack' for proofing at about 80 degrees is to turn the light on in your oven and use the oven as a proofing chamber. Works great- if you have a bulb that you can independently control in your oven.

      That sounds delicious. I may have to try it. Do you put chopped onions on top of the dough before baking or mix them into the dough?

      @@mygirldarby, I personally wouldn't add onion, just rosemary & garlic. If I did use onion I would roast the garlic/onions and blend into a puree and mix it with some olive oil and brush on the top. Then add rosemary on top OR add chopped rosemary in the olive oil/garlic paste and brush on the bread halfway through baking. I'd do a 2 tablespoon olive oil to 3/4ths tablespoon of the paste, and lastly add flaky sea salt on the top. :)

    My gosh, a cloud of loveliness... can you incorporate some yummies in it? Like pepperoni and cheese and make pizza bread, I use to make it all the time, but back then I used a store bought pizza dough

    Ooh ooh ooh I love getting honey from the locals and find some straws, I use big-ish ones and crimp the ends and seal it with heat, then mix the honey with a bit of lemon and cinnamon,then pour it into the straws, then seal the top with heat and throw them in the freezer, great for melting into tea or even eating as a sweet treat...enjoy!♡♡♡

    I just started a new sourdough starter the other day, and I went and checked on it after watching this. It's all bubbly and it smells like fresh beer, so I guess I got a good one.

    My mom used to get one at stores in the san francisco bay area that was topped with tomato sauce, like a pizza sauce, just a thin layer. I have not seen it in so many years and I'd love to have it again. This recipe looks so good, maybe a tomato paste, basil and oregano sauce topping would be perfect.

    That looks absolutely heavenly!
    If you want a savory bite, mix together equal parts olive oil and balsamic vinegar (with a sprinkle of oregano), tear off chunks and just dip it in. It's pure bliss!

    lovely Focaccia. I love to bake with sourdough but I use a higher hydration sourdough and dough so you get this big holes that fill with oliveoil after baking. I also sprinkle that focaccia with flaky salt for flavor and crunch. Again another lovely video. thank you so much for sharing.

    I use basic focaccia to make pizza for my family, use olive oil and corn meal on the pan so it doesn't stick and you get a crunch. Great Vid.

    Add Rosemary, thyme and oregano on top but also in the dough, preferably fresh! Serve with fresh mozzarella, tomatoes, MORE olive oil, prosciutto and salt and freshly cracked black pepper. 👌🏼❤️🇮🇹

      Laura Metheny My god mother makes awesome tamales, $12 a dozen and they are big. She make pork, shredded chicken(white meat) in green salsa(not spicy) and refried beans with pickled jalapeños. She lives in San Antonio maybe she can ship. Let me know #laurametheny

    That is the MOST BEAUTIFUL foccacia I have ever seen! I buy that stuff all the time with olives and cheese. But never have I seen one so perfect. I must say I was a bit creeped out by the feeding lesson. Never got much of an explanation about that....but if it makes that fluffy yummy stuff....its well worth it! We go thru so much bread here now. Ugh! Lol. I have been trying to find ones easy to make at home. Thank you Emmy! My FAM will thank you too!💞🤗🎄🎅🍞

    Oh yes, I know that wonderful smell! 😌 You can add rosemary on the top before baking, if you like it or a layer of onion, cherry tomatoes and oregano or thin slices of potatoes with olive oil, salt and rosemary..in Italy we often eat your version of the focaccia with cured meats (we have a great variety of them) especially in central Italy. In some areas of southern Italy they add smashed boiled potatoes to the dough for a softer focaccia..anyway, your focaccia looks very good, brava!!🤗

    love homemade focaccia, especially if you get the edges a little thin so they lift up when it bakes and makes the corners and edges crispy, with that lovely softness inside. My favorite is thin sliced pears and lemons, a little rosemary, finished with a drizzle of honey, sea salt, and feta after you take it out of the oven.

    That looks glorious, Emmy. The most tempting bread recipe, for me anyway, that I’ve seen to make thus far. I live at over 5600’, and am not the best baker, so I avoid it, but this? Tempting.

    It's actually interesting how you use both sourdough starter and dry yeast but I guess focaccia needs that extra lift especially when you're dealing with so much bread flour

    We learned in culinary school that when making bread, never put salt in on top of the yeast, keep separate because the salt will kill it when raw

    Man when I was in school I always loved making breads...my fav was always parker house rolls with this buttery garlic sauce or I'd always make fresh French bread so fricken good..

    That looks fantastic! We make panini’s with focaccia. prosciutto with Fruilano cheese, hot peppers and I like mustard on mine as well.. my dad points out that’s not Italian of me lol! Then we grill it.. so good!

    So as you need 1 1/2 cups of the starter for this recipe, can you just 3 days in advance make a 3/4 cup flour / 3/4 cup water mix and leave for three days (in fridge) so you have enough for the recipe or is it exactly the same to feed it daily (room temp) for three days and do the 1/4 cup water/flour mix instead?

    And I note that Americans love their garlic bread (I’m American). Thank our pizza chains for that.
    If you just don’t relate to this bread without garlic, try roasting a head of garlic, then spread that on your focaccia after it’s baked. IMO, that is far superior to putting garlic on the dough before baking. Also, y’all could make a garlic aoli with the roasted garlic. Both are delicious.
