    Pro Tip: Make the stock before you start cleaning the collards so it can start boiling down while youre cleaning them. It streamlines the process a bit better.

    Cleaning greens, shucking corn, and snapping peas was a part of my childhood. And the greens I had was fresh from the garden and had we called green bugs on em. I wouldn’t take my childhood back for nothing

    I can remember my grandma using salt and baking soda to clean her greens and cooked with fatback meat especially the grease from it... Damn, I miss her.

    OMG!!! Why am I just now finding you on YT!??? It was with your Mac & Cheese video tho and I said, that's it! I'd been looking at different videos for years and never once thought this is it... Then I subscribed to your channel and saw this video and was like OMG again! Baybe... you the chef! I love the way you cook and look forward to binge watching all your videos with my daughter. Shes 28 and I'm trying to help her with recipies, as she needs to learn to cook some things for her little family while I'm still here to guide her.     ty I didn't know dirty collard greens were a thing!! I usually just do a quick rinse. Thanks for getting me in the know!! I'll now make sure I do a thorough cleansing. See, you never know, until you know...

    Just cooked this, and am totally stuffed. It was so good couldn't stop eating it. Cant get collards here, as I live in Germany, so used grünchol which is similar. Thanks for a yummy recipe.
    Next up gonna try your oxtails.

    I mix turnip and mustard greens 🥬 with ham hock sometimes bacon and my seasonings are only salt and sugar blended to a terrific taste 😊

    My tip is I cut enough of the stem off. I then rinse them really good with a wash rag. I peel them and cut them and wash them 3 times.. until my water is clear and no 8:29 more dirt is at the bottom of the sink. That’s y i don’t eat everyone’s bc you truly have to prep them with cleanness.after each wash clean your sink then add water and repeat until clean

    I put baking soda in my greens during the washing process. I let it sit few minutes in the water, then rinse well.

      Me too. I also take a damp cloth and wipe each leaf before I soak and wash them, then I rip them up.

    Okay!! This is the best Collards video I've seen! Thank you for making this so easy to follow! I like the way you explain 'why' you have to do things this way. I am more confident to try my own. I ate them when I lived in South Carolina, and they were amazing! I live up North now, but I've never forgot them Collards. That's how good they were!!

    My Granny taught me to throw a small box of frozen spinach in the pot. It helps make the greens tender.....she said. I just do what she told me to do. Greens are always slamming... so who tf am I to question?

    I remembered doing this recipe for Christmas years ago. I had to come back and tell you it was BOMB. i also blended the carrots and celery up and added it to my greens. I didnt want to waste it. I also baked my garlic to give it that little roast taste.

    I loveeeee my collard green and i grow them in my garden too well as the other's vegetables. They are a MUST have on my menu for Thanksgiving and Christmas time they are my all time favorite i grow up eating them my mama showed me how to properly cleaned them well.hey TY i loved watching all your video's..🫶🏿👍🏾❤️👌🏽✌🏽..

    It’s almost Thanksgiving. I’ve watched too many videos for this recipe and this was the one that I followed. OMG. Talk about deliciousness!! Thank you so much for the recipe.     Cleaning the greens is very important. I add a drop of Dawn to the wash water and then rinse several times.

      Lil China, I agree with you. Always get a man that can cook, or don't mind helping. Because for me, if I'm working, and he expects me to do all of the cooking, well we will not be together. In my family, everybody cooked, the men and women.
      My husband cooked too, and was a great cook.

    Thanks for sharing this delicious recipe! I do my greens this way, except instead of adding all those lovely veggies to the ham hock stock, I cheat a little and use vegetable stock. Don't tell nobody!

    Hi !!! T.Y good morning.. I know about cleaning greens .. it's a lot of work cleaning them. I do understand stand what you are talking about .. I only use kosher salt . I don't like table salt at all .. i.also use pin salt those are the only salt I use. I don't eat nobody greens except my grandmother, father , brother. You have to make sure you use vinegar and, salt to clean those greens properly. My dad showed me how to clean greens . I was tired after that. I use smoke turkey in my greens . Thank you for the Collard greens video the greens look delicious. I agree I like to use shallots they are a little more classy then onions, I use shallots in some of my recipes instead of onions they are milder then onions. 💙💙💙💙💙💙 🍷🍾😘👍👍💜💜💜 have a bless day.

    When you added that apple cider vinegar and sugar, I knew you were a great cook. I cook mine just like you, but add a lot more water and place in the crock pot over night. I like a lot of pot liquor and the stems. I will try the carrots when I make mine next week. 👍😋💞

I enjoy eating greens cooked this way .My Mom (deceased 3 yrs.) used to prepare hers with ham hocks and we loved them more than with smoked turkey. A big difference in taste to me.     I just cooked mine i just used smoked Turkey wings instead an a person that never cared for collards but have to cooked them for her family...Babbbbby when i tell you "this dont make no damn sense" how good they are!!     Love this recipe! Before I add the greens to the pot I usually sauté red and orange bell peppers, 1/2 lb of bacon cut up along with the shallots and onions. Then basically do the same thing you do in the seasonings and the smoked ham hocks.
