Cashew nuts contain healthy monounsaturated and polyunsaturated fatty acids, which have a positive effect on the cardiovascular system. Eating cashews can help lower "bad" cholesterol (LDL) and total cholesterol levels in the body, which reduces the risk of cardiovascular disease. Red cabbage is a good source of fiber. Fiber contributes to a feeling of fullness as it is slowly broken down by the body and helps control appetite. They also support normal digestion and help keep blood sugar levels stable.     Recipe:
    Red or white cabbage (alternatively Chinese cabbage)
    Carrots
    paprika
    spring onions
    Coriander or parsley
    Cashews
    For the dressing:
    olive oil
    lemon juice
    White wine vinegar
    Honey
    Pumpkin seeds for garnish
    Finely chop the cabbage and place in a bowl.
    Peel the carrots and cut them into thin slices with a vegetable peeler and add them to the bowl.
    Cut the pepper into strips and add to the salad.
    Finely chop the spring onions and coriander and add to the salad.
    Roast the cashew nuts and let them cool.
    For the dressing, mix olive oil, lemon juice, white wine vinegar and honey.
    Roughly chop the nuts and add to the salad.
    Dress the salad and mix.
    Place on a plate and sprinkle with pumpkin seeds.
