    Level out your cups of flour to make sure you are getting the right amount. That is why it is getting too dense...

      Sara Bradford exactly! Tips from a baker here!: Spoon the flour into your measuring cup and level it off flat! Scooping straight out of the bag will be packing the flour into the cup and you’ll actually put too much flour in your recipe. If you wanna get super precise like almost all bakeries, use a kitchen scale and weigh your ingredients instead! Also does your fav brand of flour make a bread flour? That could help as well. Good luck!

    I let my bread rise twice, once it raises the first time I punch the air and let it rise again. It makes my whole grain and spelt bread soft like white bread!

    Some Tim’s for your bread. Most importantly you should weigh your flour because measuring cups are not accurate enough for bread making. Also you need to let your dough rise in a oiled bowl or loaf pan so the dough has something to grip to when rising. I hope this helps!

    Oh, one more thing Nikki! A tip for baking! Weight your ingredients for recipe accuracy. Might fix the dense bread problem. If that doesn’t help, try a different recipe. 😉 Good luck!

    My mum is a Baker and has given me some tips over the years to make delicious yeast dough:
    1. Use fresh yeast if you can. It tastes waaaaay better.
    2. If you do use fresh yeast, mix it with a little bit of luke warm water and some sugar and let it sit until bubbles form, about 5 min. Be careful, do not use water that is too hot or it will kill your yeast.
    3. Make sure you don't put your yeast mixture directly onto the salt or oil of the dough. Put the salt first into your bow,, than the flour and then your yeast mixture. I don't know if it's true but apparently the yeast won't work as good other wise.
    4. And the one my mum always goes on about is kneading! If you think your dough is done kneading, it probably is not. The dough should have a very smooth top. She always said the dough is supposed to feel like your your earlobe.
    There probably are some more that I am missing but hopefully some of these tips are helpful! You can use these tips for basically any yeasty dough you are making! Good luck with your delicious bread making :)

    hi nikki! I have some tips for ur bread making, if ur bread is to dense it’s probably from rolling it or developing to much gluten in the dough, so i would suggest not to play with it to much! Hope this help

    Using a wooden spoon to beat the dough in circular motions going upward toward the middle of the mass of dough really beats a lot of air into it and helps the airiness. Too wet of dough makes for a very dense gross bread texture. My mom makes the BEST homemade bread and I learned from her. I think sifting flour also helps but I feel like everyone skips that step ;P. You can also add cream of tartar to increase the fluffiness factor. Letting it rise longer is super helpful too. Here's to your next best homemade bread!

    You make everything look so good! Who knew there was red beet pizza crust? Red beets was one veggie I couldn't stomach as a kid. I had a policy when raising my kids. If I didn't like the veggie, they didn't have to eat it.

    try out different bread recipes but in lower quantities. my fave one is
    8oz of flour (1 cup)
    2 tsps of yeast
    2 tsp of butter
    a pinch of salt
    1 tsp sugar
    I have some hot water from the tap and I add milk to it until becomes body temp slowly incorporate the water and milk mixture to the other ingredient until the dough is well combined. knead it until it is smooth. Then allow the dough to rest. Shape the dough into a desired shape then allow it to rest again until doubled in size. bake at 350°f until golden on top.

    So on the bread-topic! I’d leave the dough a bit “wetter”, leave it in the bowl to rise with some flour on the top and with a clean kitchen towel to cover it! Also, leave it to rise a bit longer and air bubbles will start to form in the bread, making it more airy. I usually store my bread wrapped in a clean kitchen towel, which is then but in a plastic bag.
    Perfection comes with time and practice ⭐️

    About the bread making, I think it's important that the water/liquid you use is room temperature or colder. The yeast will die if the liquid is too hot, so it's better to be on the safe side with colder liquid, and then just let it rise for longer. The reason you would normally use lukewarm water, is for the yeast to rise, but it will rise regardless, it just takes a bit longer if the liquid is colder :)

    Hi! I’m a FCS teacher who teaches cooking classes. When baking you need to be a bit more precise with your measurements and make sure you’re not packing your flour. Use a spoon to lightly scoop your flour into your measuring cup - make sure its heaping - then use the back of a butter knife to level the flour across the measuring cup. This is a great place to start to ensure a lighter outcome with your baked goods!!! Good luck! :)

    I make bread aaallll the time. Tricks are add a tad bit more water than the recipe calls for. Moderate sticky-ness is best. Put it in a bowl with a HOT cloth over the top and then we let it rise for an hour in the microwave (it holds in the moisture better). Also adding some oil to the bowl you let it rise in helps too with the sticky texture. Hope those tips help! Love your videos ♥️

    Hey Nikki! I am a baker and would love to give a few tips. If your bread is dense you may not have been kneading it enough. The act of kneading the dough incorporates air. Also, baking bread at home is always tough because professional bread ovens have built-in steamers. Obviously, we don't have that at home lol. Not steaming your bread can make it dense and dry it out. You should look up some recipes that use a dutch oven to bake the bread. The dutch oven keeps the moisture inside. It's the only way I have been successful baking bread at home. Also, if you are going to want to add rosemary, I would say to knead it into the dough. It will be a lot more flavorful than if it's just sprinkled on top.

    Bread making tips!
    1. Use a big spoon or a smaller measuring spoon to scoop the flour into your cup measurement. When you scoop directly from the bag like that your flour is almost pressed together and you're guaranteed to get too much.
    2. Always, always level out the flour. The top of your measuring scoop should be completely level. This helps to not incorporate too much flour which will result in a denser bread.
    3. Make sure you really knead your bread until it's smooth. A good thing to look up is the "Window pane test" basically you want to be able to pinch of a bit of your dough and stretch it so you can see light through it without it ripping apart. This is a good way to tell if the gluten has developed enough in your dough. The gluten is what gives you the beautiful texture and air into your dough.

      Oh and for storage. Wrap your bread in plastic wrap (or the reusable wax paper if you prefer) and let it live on the counter. The worst part about homemade bread is it's just not meant to last a long time! The type of bread you make very much affects it's shelf-life.

    I would combine it all, let it double in size in an oiled bowl. Then I would shape it, then let it proof again, then bake it. I like to "proof" my bread in the oven, I'll take a little metal bowl with boiling water and turn the oven down as low as it will go (usually about 170°C). Keep it covered with a dish towel though.
    Hope that's helpful. Also the fluffiness can also be determined by the flour you use, how much of it and even the yeast.

    I would go off when your last period was or when you thought you ovulated and stuff because the same thing happened to me. I knew exactly when I got pregnant and everything but then at my 19 week ultrasound they said I was measuring at 20 weeks so they pushed my due date up but then he was "a week late" but really he was perfectly on time for my real due date he was just measuring big because he was a big baby. Born at 9 pounds.

    I’ve never made bread before but I’m an avid baker and whenever I’m measuring flour, I scoop the flour into my measuring cup and level the measuring cup off with a butter knife. Scooping the flour directly out of the bag tends to compact some of the flour, so maybe that contributes to the dense-ness of the bread?

    I make a no knead bread. Use only 1/4 tsp yeast. Let it rise in bowl overnight, scoop it gently onto parchment paper then put inside a Dutch oven with lid in oven at 500 degrees. It turns out crunchy on outside, airy on inside and prefect all around. It's the kinda bread you'd eat with just melted butter on top and it wouldn't need anything else 😋 if you need I can send a recipe from the blog I used it

    Homemade bread stores really well in paper bags. Like the medium size lunch sacks. My dad used to make homemade sour dough bread all the time before he passed away. It was the best bread ever. He really mastered keeping a sour dough starter alive, which is something I struggle to do. Bread making really is an art that takes time to perfect. I’m still working on it myself!

    I am also 20ish weeks along! I am honestly not sure exactly how far along I am as it keeps changing whenever I go in for a check-up. Anyways, everything you make looks so good and healthy! It makes me want to completely change my eating habits. I will start by switching to Kerrygold butter! I've got a baking/cooking advice for you, I just learned this a couple months ago and I didn't realize how much of a difference it makes until I started implementing it and I think it might help your bread not be so dense. When you are measuring the flour make sure that you lightly fill the cup up, which I saw you do, but then scrape the remaining off with something flat such as the back of a butter knife. I hope this helps your bread not be so dense, I know it's helped my bread! :)

    Girl so happy to see you eating them soft cheeses! Most goat cheeses use pasteurized goat milk.. I cut it out my first trimester and was so bummed because I didn’t need to! Can’t wait to hear your take on it! 🤗 your cooking videos are my fav, we are about 1 week apart. I’m due 1/14/20 💕

    That pear pizza looks so good!! Also, you've inspired me to try out some chocolate/peanut butter flavoured smoothies :P Mine are usually super fruit based (frozen strawberries, raspberries, blueberries, bananas) with frozen yogurt and orange juice, but I think I'll try something different next time!

    Using bread flour instead of all purpose flour will make your bread rise better because it has a higher gluten content. Also don't just add the whole amount of flour right away... Mix a bit in at a time until it's a "knead able" consistency. Sometimes you'll need more or less flour than a recipe calls for because of humidity or how packed your flour is so start with less and mix first. You can always add more but you can't take it away. 😊Sarah

    That omelet looks yummy! Helpful hint on your garlic peeling, and you may already know this, but if you turn you knife so it’s flat and put your garlic under the knife and give it a smack with your fist the peel will come right off. No need to cut and peel. ❤️☀️🌈 Loved this video!

    Use a food scale when measureing out your flour and try using a little oil when you transfer it to the counter instead of adding more flour. And if you knead by hand and you think you’re done, keep kneading. Have you tried using bread flour?

    I just wanted to say thank you, because you made me enjoy salads for the first time in my life! Now I eat salads and veggies every single day, and I love it so much. It really helps to season the salad/greens with lemon juice and salt, and I learned that from you. I also use different dried herbs and some pepper when I want a bit of a different taste. :) Seriously, I went from hating salads with a passion, to being excited about the next time I would get to eat them :P THANK YOU!

    Nikki idk if you have a bread machine, but there are some that allow you to add the ingredients and it does the work for you. It mixes, proofs, and bakes. Once I started making bread this was, it changed the game. Much more consistent and and less dense.

      @@NikkiPhillippi another random thought lol there is a Sur La Table in Nashville that has great cooking classes, and they definitely have a bread class. I took one for croissants, it was so helpful, informative, and fun.

      I have a bread machine and use this recipe: 1 1/4 cups water, 1 tsp salt, i tbsp oil or butter, 3 cups of flour ( bread flour) and 1 tsp of bread machine yeast. The bread always comes out perfect!

    I always find that 1 hour per rise works best, and do a double rise for all bread... so mix, knead, rise... then knead, rise (again) and bake.
    Also, kneading really well will give you a fluffier bread. So knead the bread until the dough is smooth and pops back when you stick a finger in.

    Alright, you probably got about a gazillion tips on bread making but here are my 10 tips for kick ass bread:
    1. Use the right flour! I saw you using normal all purpose, but for proper bread you need strong flour which is higher in gluten so it will have a more open texture. Normal flour will always give you a dense texture and won't give a proper bread taste. That alone, will make a huge improvement.
    2. Use lukewarm water (37 degrees) to properly activate the yeast.
    3. Do not pat, press or overwork your dough too much. Yes, needing is important, but don't go overboard.
    4. You should aim for a gum texture. You can see your bread is not elastic enough which can have all sorts of causes. Aim for a texture that is still a bit sticky. If your dough has cracks, like it does on the video, it needs more water.
    5. Let your dough rise for at least an hour for white bread and at least 2 hours for wholemeal. Let it rise in either a proofing oven or somewhere near a radiator. It should have doubled in size! This is a better rule of thumb because rising times can differ depending on temperature.
    6. If you are shaping your dough in to a form or into buns, you need to let it rise again because working your dough will cause to let the just formed air bubbled deflate again. So if you want to add ingredients like cheese, nuts & fruit etc. Work it in after the first rise and then let it rise again for a minimum of 45 minutes. All recipes that say 'quick' are as true as 'one size fits all'.
    7. Use enough salt and not too much sugar/honey! You should add about 5g of salt for each 250g (1 cup) of STRONG flour. You can skip the sugar/honey if you're using dried yeast. European bread (French, Dutch, German) doesn't contain any sugar if baked fresh.
    8. Use oil in your recipe. You can use any liquid oil but do not skip on the fats! It will add flavour and improve your texture.
    9. Always check if your dried yeast hasn't gone over it's expiration date. Old yeast won't work so you won't get a rise. The fresher the better!
    10. Use a scale! I see uneven cups and bread making (as is all baking) all comes down to exact measurements. If you don't like using a scale, be as exact with your cups as you can be.
    11. Bonus tip: If you like eating homemade bread more than you like baking it: Buy a bread maker! Honestly the best investment ever. Especially when baby P has arrived. They have timers so you wake up in the morning to a fresh loaf.

    Gimme all the fooooood! Ahh 😍 I’ve been loving peppermint tea during pregnancy! And try mixing your yeast in a different container first with your honey or sugar let it sit and bubble! Then pour it in :) a kitchen aid is a huge help and I made homemade bread allllll summer last year while working in a village!

    A tip when making your own bread is to use less flour than in the recipe, stop when the dough still feels a little sticky. I find that the bread gets less dry this way! Another tip is to make cool rise bread. 🙂

    Hello! You should be kneading your bread for at least 10 minutes. If that takes too much effort you can use a stand mixer with a dough hook and let it go 6-10 minutes and the dough is pulling away from the edges of the bowl. Hope that helps!

    Great video. Cooking out of the fridge and freezer are some of my favorite ways to cook. My bread dough never turns out right. I think my problem is the length of rising time or maybe I don’t put it in a warm enough place to rise. 🤷🏻‍♀️

    Oh Nikki, I got an organic cotton bread cloth bag from iherb for my bread :) If the bread "sweats", the cloth will absorb it.

    Sifting the flour can help with it being too dense or heavy & scooping straight from the bag with the measuring cup tends to compact the flour in the measuring cup. :D hope this helps. I usually don't follow the exact amounts recipes call for flour because you can end up adding to much flour and making the dough more dense. I try to go by feel with bread and starting kneading it when its a little sticky or tacky and watch the texture before kneading in more flour

    My bread recipe is hot milk with butter, and honey. Then mixed with yeast and hot water. Then mix with flour. Don’t over knead. Then I let rise 60 mins. Then roll out to get out air bubbles, and then roll into bread pans. Let’s rise again 60 mins. Then bake.

    I use plastic bread bags from Amazon. Since they aren’t completely sealed they seem to not let the bread get too moist. They work pretty well for me!

    I make sourdough and sell it. I get bread bags off amazon. And that's all I store it in.
    Also a great white bread from pintrest is the amish white bread recipe. Definitely follow the rise times. I found this recipe easy and delicious.

    Use bread flour! It seriously makes a difference. Also, cook your bread in a dutch oven (with the lid on) at 500 degrees F for 30min-1hr. I agree that nothing with bread making is foolproof, but this usually works! (Don't forget to grease the dutch oven, though!)
