In preparation of the chilli cut off the steem end, and the open end remove inside seed membrane leaving seeds if you want. Then fill with your pepper with stuffing , take a small burns amatic torch, hold the pepper upright with the torch circling the pepper while blackening the pepper, halph way down the pepper turn upside down and finish the other end by holding in the stuffing, wipe off burnt skin with water keeping water out of pepper, and then apply bater, then fry. I have found that by doing this method makes it a much better operation. Chuck.

I’m a New Zealander, and my Mum taught me to cook from my European roots from 7 yrs old. I am just starting to learn about real Mexican food and cooking, including this Summer growing my own chillies, and making tortillas from scratch....this looks amazing, just appeared in my YT feed. I NEVER comment on cooking videos or recipes because I can't can stand when people comment on my recipes or dishes. It is frustrating when showing somebody how YOU do things and they want to add there 2 cents. Anyway I LOVE when you say "or whatever is comfortable for you home." Or "comfortable for your family." I am going to adopt that saying and I will give you credit when I can. This dish looked amazing and that sauce it exactly what mine have been missing. I LOVE that your mother is watching and judging and enjoys your struggle. It seems authentic and relatable. Thank you so much for doing what you do!

The world of cooking opens up to you when you realize that recipes in general are not strict rules but open suggestions because everyone’s palletes are different.
Personally I always make it exactly how the person that gives me the recipe intended it just out of respect but if it’s not the most perfect form of that dish I ever had then I’m probably going to take what I learned and try to make it better.
People also don’t realize you can use 100% same ingredients and measurements but use different techniques or cook different things in a different order and that all can effect the final taste of the food.
My over all point is don’t be afraid of cooking it’s an adventure enjoy it.

Gracias!!! I loved your idea of flour on the chiles, I did it light, but you went for it. Then the egg yolks folded into the egg white, Loved it!!! Thank you, never saw that idea before. I' m from Monterrey and I'm 80 Years old. Not too old to learn a few things about chiles rellenos.

Just want to let you know how much gratitude I have for you doing this video. I made it and freaking nailed it for my boyfriend. It was important for me to find the most authentic way to make it to honor his Mothers heritage and memory. He lost her when he was only 25 years old so sudden due to unexpected heart attack. They had dinner and she sent him home with Chile relleno…. He ate a few bite of that , saving and cherishing a memory of her.
Thank you for sharing what seems like a precious family recipe . I love the way you interact with your Momma , she seems like your worst critic but also your biggest fan. Food is meant to heal and to be shared . Mahalo for having my back as I tackled this bucket list . 123 Les Go!

This looks so good. I make Mediterranean Stuffed bell Peppers with rice for my family. We roast our bells & banana peppers on a charcoal grill or stove top in winter too, but not as dark as yours. Then clean off skin, seeds & stems & mix with olive oil. Then eat as a side or condiment with goat cheese & black olives & home made bread or put them on a sandwich. I'm going to give your recipe a try with bells & rice instead of potatoes. Mexico meets Mediterranean, lol. I bet it will be delish. Ty for sharing.

Teresa Hobgood yes by beating the egg yolks then adding a few spoons of beaten whites to the yolks, then pour yolks into whites and fold....would make folding to yolks into the whites easier.

(My hubs watches at night with me :-) I've made all your agua frecas, your lime rice and several other things! I'm going to make your mango orchata to go along with the rellenos! We love you and your personality! My only critique is to stop mentioning the haters! If people don't like how you do things... THEN WATCH ANOTHER CHANNEL!!! It's so lame to leave negative comments on someone's channel. If you don't like it move on. Thanks again for all your great recipes and don't let the haters or trolls get to you. Much love! XXX
