  • Today, I was yearning to savor the exquisite spiciness of India, igniting my desire to embark on the creation of a recipe that harmoniously blended aromatic spices with the velvety richness of the sauce and the fluffy perfection of the rice. The result was a delectable and intricate dish known as Chicken Makhani, fondly referred to by many as butter Chicken.
    Let's delve into the ingredients that will bring this culinary masterpiece to life:
    700g of chicken thighs
    1 onion, diced
    2 cans of can tomatoes
    4-5 tbsp of Greek yogurt
    A single green chili for a hint of heat
    Half a lemon to brighten the flavors
    Cream to lend a creamy touch
    Cooking oil
    A captivating blend of spices including garam masala, turmeric, coriander powder, cumin powder, garlic and ginger paste, chili flakes, bay leaf, cloves, and cinnamon.
    Now, let's embark on our flavorful journey:
    1. Begin by cutting the chicken into 3cm cubes and marinating it with 2 tsp of garam masala, 2 tsp of chili flakes, 1 tsp of turmeric, 1 tsp of coriander powder, 1 tsp of cumin powder, and 2 tbsp of ginger garlic paste. Coat the chicken well with 4-5 tbsp of Greek yogurt, allowing the flavors to meld overnight or for at least 2 hours in the refrigerator.
    2. Cook the marinated chicken until it reaches tender perfection, then set it aside momentarily.
    3. In a pan, drizzle cooking oil and add the finely diced onion, a fragrant cinnamon stick, 5 cardamom pods, 1 bay leaf, 3 cloves, 2 tsp of garam masala, a touch of green chili, 1 tsp of cumin, 1 tsp of coriander powder. Allow the spices to release their aromatic essence for a few seconds before introducing the two cans of tomatoes.
    4. Envelop the ingredients with 2 tsp of garlic and ginger paste, 2 tsp of turmeric, 150g of butter, 200 ml of cream, and a sprinkle of salt to bring out the flavors. Let the mixture simmer gently on low heat for 15-20 minutes, allowing the flavors to meld.
    5. For indulgent creaminess, blend and strain the sauce to perfection.
    6. Return the sauce to the heat, gently nestle the cooked chicken within, and allow them to mingle on low heat for another 10 minutes. Ensure to adjust the seasoning with a touch of salt, butter, or additional spices, if desired.
    7. To serve, elegantly spoon the tantalizing Chicken Makhani over a bed of plain rice, drizzle it with a hint of cream, sprinkle it with freshly chopped coriander leaves, and accompany it with warm and fluffy naan bread.

    The written recipe is NOT correct and has a lot left out. It does not have all the ingredients so follow the video instead of using the written instructions. The recipe on the video looks good!
