I bet your family love these,we use Baby Ray’s sauce too because it is like Kansas City sauces which are smoky and sweet. Looks perfect, don’t you love when it falls off the bone like that. 3 hours @ 350F Uncovered? Wow, that must be some dry ribs. Try this... - Place the ribs on the sheet pan and then cover the sheet pan with foil to seal in the moisture. - Cook 275F for 3.5 hours. (falling off the bone and moist asf. If you want more off a bark remove foil for the last hour.) - Remove from oven and baste with barbeque sauce. - Broil for 3-4 minutes or use a torch. What you want is caramelizing of the sugars in the BBQ sauce. NOTE: If sugar content in the BBQ sauce is high such as honey BBQ sauce be extra careful of blackening since its likely the sugar burning giving it an off taste.
I love all of your recipes, everything be hitting! The only thing I can do without is the cumin seasoning. I just do like that gritty texture it gives the meat
FYI I made these tonight! Sooo good but I cooked them for 2.5 hours and then did 15 with the sauce. 3 hrs and 20 mins would have been too much. I had a smaller cut and they were a bit over cooked. I cooked on the bottom rack too.
I’m making these again and I agree with you, when I did 3 hrs they were a bit overcooked but still good lol but tonight I’m definitely adjusting to see what I like better 😋 I want to say it’s just every oven is different

When you smoke ribs, you don't taste the mustard. I don't know about the oven.
