Thank you, too! It's always heartwarming to see people using cast iron pans. My aunt had a farm in Maine, complete with a gravesite on the property, and she used her wood-burning stove (all cast iron) to heat the house and prepare all her meals. Cast iron truly is the best-I use it for everything! One day soon, I hope to have my own wood-burning stove and farm. Yay! Your recipes are classic dishes that most people recognize, even if they don’t realize it. Ironically, not too long ago, people were generally more fit, healthy, and happy, while enjoying a wide variety of foods. Today, it seems like everything is non-fat, non-dairy, no sugar, fat-free, gluten-free, etc., yet many fail to see that cooking traditional dishes, like this one, is often far superior and healthier than they realize. It’s clean eating that tastes great! It’s funny how our forefathers and foremothers understood this, and I’m glad we are returning to what truly matters. I also believe in adding God back into our lives, showcasing who we “really” are, and embracing the unlimited possibilities that lie ahead. Another idea to get supper on table quick. If you have leftover meatloaf you can turn that into a shepherd's pie as well. I did that recently as well. Basically break up the meatloaf, add your veggies and top with your mashed. Put into a 350 oven for 20 minutes to heat everything thru. Enjoy. Hang in there we all need to remember times are hard and we all need ideas to stretch our budgets. Keep up the good work.

Hi Becky! I made a version of this the other night and I can't tell you how delicious it turned out! I used a packet of cream gravy mix and I put sour cream in the instant potatoes. Then I felt like one package of mixed vegetables wasn't quite enough so I had a package of frozen broccoli which I cooked a little then cut up and added to the mixture. Loved it! I've used a paper towel for use to sop up grease in a pan for years. I made this dish only once several months ago. I like it but my husband didn't. He said he didn't like his food mixed together. It's always heartwarming to see people using cast iron pans. My aunt had a farm in Maine, complete with a gravesite on the property, and she used her wood-burning stove (all cast iron) to heat the house and prepare all her meals. Cast iron truly is the best-I use it for everything! One day soon, I hope to have my own wood-burning stove and farm. Yay!
Your recipes are classic dishes that most people recognize, even if they don’t realize it. Ironically, not too long ago, people were generally more fit, healthy, and happy, while enjoying a wide variety of foods.
Today, it seems like everything is non-fat, non-dairy, no sugar, fat-free, gluten-free, etc., yet many fail to see that cooking traditional dishes, like this one, is often far superior and healthier than they realize. It’s clean eating that tastes great!
It’s funny how our forefathers and foremothers understood this, and I’m glad we are returning to what truly matters.
I also believe in adding God back into our lives, showcasing who we “really” are, and embracing the unlimited possibilities that lie ahead. Anything is possible, and that exciting future is just around the corner. (Yay again!)

Another idea to get supper on table quick. If you have leftover meatloaf you can turn that into a shepherd's pie as well. I did that recently as well. Basically break up the meatloaf, add your veggies and top with your mashed. Put into a 350 oven for 20 minutes to heat everything thru. Enjoy. Hang in there we all need to remember times are hard and we all need ideas to stretch our budgets. Keep up the good work.

Hi Becky! I made a version of this the other night and I can't tell you how delicious it turned out! I used a packet of cream gravy mix and I put sour cream in the instant potatoes. Then I felt like one package of mixed vegetables wasn't quite enough so I had a package of frozen broccoli which I cooked a little then cut up and added to the mixture. Loved it!
