  • The long-awaited conclusion to my yeast test with pomegranate juice is finally in, and the results are astonishing - the juice turned into cough syrup! Just kidding. Just watch the video.
    PART ONE - THE SETUP: • Does size...er, yeast,...
    (3) 1-quart bottles of "Just Pomegranate Juice"
    1 tsp. Lalvin 71-B yeast
    1 tsp. Fleischmann's active dry bread yeast
    1 tsp. Red Star Premier Classique yeast

    Drank The wine I made in 2020 from bread yeast (shortages , lockdowns… etc) it is just as good as a wine made from 71B that I’d typically use , it’s not an “inferior” product and if wine yeast wasn’t cheap I’d use bread yeast

      In my several tests I’ve done so far, I’ve yet to verify the often heard claim that wine from bread yeast is inferior to wine made from wine yeasts! But I haven’t tested extensively.

      I agree. It taste just as good if left to age for at least 6 months at the least.

    Your video alleviated a little anxiety I had about using Fleischman's yeast. This is our first go at making peach wine and it has been our concern. While watching part one and two, I was rooting for Fleischman's the whole time. Thank you

      In my cider video, I used four yeasts, and the best was a wine yeast. Most winemakers agree that wine yeasts make a better flavor profile. Now as you know, my own testing hasn’t been very clear on the subject. I’ll need to test more expensively to verify for myself. Needless to say, bread yeast can make good wine!

    Which bread yeast? I use Fleischman's which gives me 12% consistently. You may get a better contrast in a traditional mead. (just my opinion though) Thanks for the video.

      Same one! I typically get 12% pretty consistently as well. I will try a yeast 2.0 test with mead for sure, I think you’re right that I’ll get sharper contrasts.

    There are many aspects in making wine in many steps, I feel your test is incomplete and confusing. It would be nice to know how you prepped your juice, how long it was since you started the fermentation to your test, the clarity and fallout results, and maturing over a quarterly period for a year. I also don't know if you went over your hydrometer reading, it sounds like it's not that accurate. I don't think you finished your test...

      I agree that it’s incomplete, but I don’t think it’s confusing. The first video shows how I prepped the juice (namely, I did nothing at all other than open them up and toss in the yeast). I did in fact state how long ago I started the fermentation. Clarity and fallout results would have been another good parameter to include, I will next time for sure. I went over the hydrometer reading for each cider in the video. Why think the results were inaccurate?

    repeat with 14% and then we will see the real results
