    If you want to cook or make wine the BEST person to learn from is this guy!! He needs his own TV Show. Please don't edit out mistakes. All these other cooking shows and videos are PERFECT and everyone knows we all make mistakes. It makes the video more personal to leave the mistakes and mishaps in. Excellent job!

      Lockdown on kangaroo island where all the jobs BURNED AWAY and then Covid happened so... lots of us are struggling to provide ourselves with simple luxuries we used to take for granted (like booze) we simply can’t afford it. Yet so many fruit trees survived in back yards. Trade culture is resurfacing out of necessity and i look forward to trying to make this so my street can have a drink again 😊

      yes some natural yeast is highly prized for its activity and ability to ferment to high abv. the up side to buying yeast is you know what strain you have and what flavors it and abv it should give. if you brew with a bought yeast strain you can wash it after fermentation and dry or propagate in a liquid and keep a known strain that you like without having to buy it again.

    Thank you so much for this . I was looking for an alternative to commercial yeast sold here. I happened to find out that the industry 'enhances' the yeast with soy lecithin , that I want to avoid at all costs.
    Now I have another DIY assignment on my hands. Thank you for it 🍇

      @@ryanidrees4218 How long is a piece of string ? In my personal experience it all depends on various elements like, the season and the temperature in your home, natural sugar in grapes, the "bug count" etc. As the sugar is eaten by the "bug" there will be less bubble and thus less yeast. Best is to experiment and keep track of your findings till you fond the right "recipe" for your conditions. It is worth investing the time. Good Luck !!!

    I used organic raisins (that were a couple of years old) to make sourdough starter after I watched your video on making starter three ways. It took off right away and was very active. So if anyone tries it I recommend using organic raisins. (I didn’t buy organic on purpose-it was what they had at Costco. 😉)

    I've made wine for decades without buying yeast. The natural yeast on the grapes is enough to make wine. The problem now for me is that I no longer have control over the growing of the grapes so I have to use yeast.

    I think I'm broken. This was the most amusing video I have ever seen. I've never seen someone so passionate about something and look so annoyed that they have to teach it.     Thank you very much for this video...I'm in Italy and when lockdown started we could not find yeast in the shops. I found your sour-dough starter experiment using the money and since have been baking bread every week with your starter recipe. I also shared it with my sister and mother in South Africa who also bake with your starter. Your experiments is helping us through these tough times and we compare our breads and results -bringing us closer even though we are far apart. Now we can also start making drinks and share a glass of pineapple wine or ginger beer using your recipes. WELL DONE and GRAZIE MILLE Maestro!

    I got to know one thing today that this raisin or apple or any kind of wild yeast can tolerate only upto 4-6% abv after that they die. So this yeast is not good if you want high alcohol level.
    Edit- may bad, i checked it again and raisin has wild yeast called saccharomyces cerevisiae and got alcohol tolerance of 13-14 %

      S. cerevisiae is also the yeast on apples, and apples ground up and pressed and allowed to ferment naturally-cider-typically ferment to 6-8% just from the yeast that lives on and around the fruit (and with the addition of sugar, this can be pushed to about 10% or higher). It's the same yeast, though different strains (which may be subspecies), as what ferments bread, wine, and beer.

    I have a question, why didn't you leave the skin of the grapes when you squeezed them? Would it be different if I do it without removing the skins?

      Carlos Arenas I end up in the emergency room from throat closing because they left the peel one when they made the wine. I have a wine executive friend that I asked and this was his answer as to why I have a reaction.

    I have been using my grape yeast for 4 years now always use my yeast leftovers for next batch and yeast will survive in fridge over a year with no problem for me

    Do i need to wash the grapes before squeezing?
    Some other videos they don't recommend washing tge grapes because by doing that you get rid of the wild yeast attached to the grape skins!!

      If it is small guantidy yes you wash but you have to wipe after so there is no water. If the quantidy is big there is no need.

    Hello, This is one of the best video I have seen, I made the first batch of yeast, used 1tbsp for bread, but now I am not sure what to do with rest :D.
    how to store the yeast? should we keep it in refrigerator? and if kept in refrigerator, do we need to keep it outside for some time to reactivate?

      Keep you yeast in the fridge otherwise you need to feed it to keep it alive similar to how you make a sour dough starter. When you go to use your yeast starter again it should be at room temperature because sudden temperature changes e.g boiling hot or freezing cold can shock and kill your yeast and you'd have to start again.

    here in the US, ginger root is traditionally used, it's called a ginger bug
    you have to add sugar because ginger isn't the greatest medium to grow yeast on it's own

    The balloons as check values is so clever! I'm going to use balloons when fermenting soja in the future. I'll try your method of making yeast from scratch too and maybe try making and distilling ethanol and vinegar one day. It's all on the To Do List of DIY self-sufficiency projects. The kitchen is busy processing garden veg and extracting nutraceuticals from baker's/brewer's yeast right now, though. Thanks for the lesson on making yeast. :D

    Many years ago I did try to do some type of alcohol beverage using a large box of dried up raisins and some distilled water and some white sugar. 🤔
    Never tighten the lid on a 1 gallon glass jug which I use for fermenting dried up raisins one night we heard a big bang and it exploded what a mess thank God no one got hurt.😅
    So this guy looks smarter than he looks. 🤔
    Great idea with the balloons. 🙂
    When fermenting anything it will make a ton of gas.😮
    That goes for sourdough starter.😮
    That goes for Amish friendship bread starter.😮
    The gas must be released or your glass jar or bottle will burst.😢
    Will try this method out when I need to make some fermentation for my bread.

    I've made wines in the past but I've left mine for 21 days then strain and transfer to another container and place in a dark place to cure for however long and until it's clear. Then I use it. But there's always room for improvement. Thanks for sharing your info.

    Because I think other yeast in air can contaminate ?
    So do you wash the grapes bro ?

    Dear thanks a lot , so much simple to make yeast from grapes.. i bought the yeast for 280 INR, I am eager to see water melon wine. Since its summer we are getting cheaper in Chennai - India for just 15 INR per kilo of watermelon .

    After watching your video, I fermented a small amount of juice from ripe black seedless grapes, I only covered the glass with cling wrap (didnt have any baloon at that time but I bought 5 baloons with smiley face yesterday and used one for fermenting pineapple wine according to your recipe from pineapple wine video). Can see some foam at the surface of the juice and some cloudy stuff forming at the bottom within the first 24 hours. This is day 3 plus...the cloudy stuff has grown a lot, lots of frequent rising of small tiny bubbles every few second and am delighted to get treated with some acrobatic show by the naturally cultivated young yeast, amazing movements...spinning around, rising and falling particles...beautiful sight observing nature doing its thing! I didnt make much juice, half of what you had in this video (because I ate the rest of the grapes, hah). Today, I transferred the entire content into a new sterilised bottle capped with a baloon. To make a test bread, should I just let it ferment until the baloon gets deflated so that enough yeast can be cultivated for making a small loaf of ciabatta bread (will use your recipe from your ciabatta video)? Or can I add more grape juice (i.e. need to buy some new similar grapes) into the currently fermenting one to make more yeast if what I may be harvesting from current small amount of grape juice is not sufficient for making the bread? Thanks.

Learning from this video on naturally cultivated yeast, i am prepared to let it proof over a long period of time as the yeast may not be strong enough. Let's see how it goes, I may also need to rework the dough and double proof if needed. Patience is virtue.

      Attempted to experiment baking Ciabatta with my yeast...and I think I messed up my yeast! Followed your recipe with everything scaled down proportionally for 170 gm flour portion. The harvested yeast looked very little and watery (think I started with about 100 ml fresh grape juice) and it only accounts for roughly 20-25 pct of the entire liquid (eyeballing by height). The upper wine portion was carefully poured out and tasted, very fruity, sweet and yes, has a hint of liqourish taste. So I poured all the harvested yeast into the water with sugar before mixing in the flour in two stages with salt added in the second stage with remaining half of the flour. After 14.5 hrs, the dough looked almost similar in size as the original one, only a few tiny bubbles appeared on the surface. I suspect it is my yeast being too little and too weak. Also, I observed the yeast too often, maybe exposing them to too much light, not sure if that also causes the yeast to die out coz by the time I harvested the yeast at 4.5 days, only one or two tiny bubbles rose up in a minute, unlike day 2 and 3 when I was delighted watching them perform acrobatic stunts and bubbles rising every 15 to 20 sec. Maybe the juice was too little and the yeast ran out of oxygen and hibernated but that should not be a problem when it is added to water and sugar before mixing the dough, correct? Hence, I started my 2nd attempt hours ago with newly bought ripe black seedless Sweet Sapphire grapes (size L berries, Grade 1, date J12, from USA). I have no idea what J12 means, lol! Sqeezed out 210 ml and put in a small bottle capped with a balloon. It is still not a lot but double the volume compared to what I started with in my first attempt. Hope this time I get to harvest more active natural yeast. And will try to bake a small bread again with the yeast and let you all know the outcome. Cheers!

    So, I have a few questions. Were those fruits organic? Would this work with U.S. Conventional / GMO fruit from a grocery store? Should I sanitize my bottles first?

    Hearing the bottle smash, I felt like a panic attack. Seems like a miracle when you placed it back on the table. Today have arranged all the things to culture natural (wild) yeast so that I may replace the Chinese bread yeast forever to make best of the wines. I like everything belonging to mother nature. 🙏

      @@Spectacular-cuoredicioccolato I had to use yogurt maker to develop natural yeast. It's too cold these days. Finally it started bubbling. Used black and golden raisins and an apple (chopped to pieces).

    Sulphur Dioxide is often used on raisins, you may want to check out for that, probably what killed the raisin strand
