Bread Yeast or D47 - which is Better?

- Bread Yeast vs Lalvin D47, a classic battle and one I've never done! There's a lot of talk about whether Bread Yeast is okay to brew with. Short version: It's fine to brew with. Then there's Lalvin D47, a real workhorse of a yeast. We figured, why not test them against each other, right? So we are making two batches of cranberry wine and using Fleischmann's Bread Yeast in one and Lalvin D47 in the other. I didn't make a super high specific gravity, just around 1.100, so we can test the alcohol tolerance of the two, and see how well they flocculate, how long they take to finish, etc. As for time, really it's unimportant, and I'm letting these sit for a month anyway, so... in the end, it's the taste that really matters! Will Bread Yeast taste as good as Lalvin D47? I'm curuious too!

Despite my geekish side and an absolute love for understanding how things work, thank you both for staying 'science-ish' in addition to thoroughly entertaining. In my return to gardening, brewing and fermenting after a 30 year hiatus, an old axiom our neighbor on the farm was fond of comes back with timeless meaning, "Baby Boy, Mother Nature is a damm good cook. Get out of her way and let her cook."
Here's a tip for those that are homebrewing. If you are unsure if you have left enough head space, put your carboy with must in the kitchen sink for a couple days to monitor it...that way you will not have an accidental mishap that will leave a big headache later on to clean up when it starts fermenting.
I made cran-raspberry wine with bread yeast and it was better than the the concord grape batch with the same yeast. I had to pitch an extra teaspoon of yeast into the must during the inital fermentation because of the acidity in the juice I used to start fermentation. I also added 1/2 c. chopped raisins (nutrients) and 1/2 cooled black tea for the tannins. I also used 2.5 c of white sugar with about 3.5 quarts of juice. The yeast I used was Red Star active dry yeast. I use it for bread as well. It takes an hour and one-half to raise a loaf, but I don't care how long it takes to rise. The bread is always good as is the wine.

One thing I'll suggest everyone look at their sugar granulated sugar now 30 calories per serving, find what Pure cane you can 15 cals per serving.

Why would you risk a all of your hard work on bread yeast when so many other good options are available I ferment twenty gallons at a time and would never use bread yeast for anything but food for my good yeast by adding it to hot water then simmer off extra water put it in an old Icecube tray and freeze all natural yeast food.

A few years ago I made some wheat and raisins wine mixing both together and then put it through a food grinder which cracked the wheat and minced the raisins. Added sugar and let it ferment when finished adding a wine glass of whiskey. It turned out pretty good.

Impeccable timing sir! Since my last note, I've got some ferments started, and I just bought the yeast I thought you used (turns out I was right) to do a side to side with a lalvin kv1116. I was thinking grape?... Juice. Lol this is so interesting to me. Thank you both for putting such an awesome content online. Everyone should be interested in these things... Unless they already know it all n just went off grid... 😂🌋⚡.
Meant to comment when the video first came out. This video was perfect timing, I was talking to a friend on Saturday about using bread yeast vs brewing yeast. He said there was a significant difference in taste so i was planing to do this experiment, for now this has satisfied my curiosity. I might still do the experiment one day, more data points means a stronger statistical significance.
