- When you have fresh seafood one of the best ways to really enjoy its flavours is simply to grill it...and my grill of choice is my trusted Weber Kettle!
In this recipe I am preparing a mix grill with wild sea bass, large prawns and squid which I will serve with a mediterranean sauce all grilled to perfection on the Weber Kettle Grill
The med sauce will transport you directly to Italy with its indistinguishable flavours.

What was the temperature of the kettle?
Anyway to keep skin of the fish?
Kettle at 180c. Usually by oiling the fish and the lemon technique i showed the skin stays on, got a bit unlucky here that half stayed and half came off, but to be 100% sure then make a bed with slices of lemon and rest fish on top, it will still get crispy skin but not being in contact with the grill it wont stick
