    hi love! i used to brew a lot of kombucha and i have a few tips :) mine was always really fizzy and tasted better than the store bought ones.
    1. keep a log of how much sweetener, what type of tea, and length of fermentation that you’re using for your first ferment. this will help you troubleshoot if a batch is off or remember what you did if it is delicious!
    2. write down the ratios of fruit/flavoring that you add to your second ferment so you can make your own recipes and replicate what you like in the future.
    3. the first ferment will pretty much always be the same length unless it’s extremely hot or cold compared to your normal climate, but the second ferment depends A LOT on what flavorings you add. more sugar (fruit, sweetener, etc.) will ferment a lot faster than lower sugar flavors (lemon, ginger, etc.) and will determine how long your second ferment should go for so you get nice flavor and good fizz without an exploding bottle ;)
    4. do your second ferment in a bottle (like you used for the passion fruit flavor) cause it will have a much better seal and the fermentation gases won’t escape, resulting in a lot more fizz.
    5. i always puréed my fruits or added juice, this way you can skip the straining step and have a more intense flavor.

    I Love Ginger with lemon or only lemon kombucha, also strawberries with Lavender. I cold press the fruits and take the peel from the lemons. So it is very great in taste.
    I also like water kefir Drink. It is easier to make and more fizzier.

    I will say as someone in their late 30s now, turning 30 was the best. I was scared at first but then it was just so much nicer than I thought it would be. I hope your 30th is also amazing and so much better than you can even imagine! Thank you for your content!

    Actually I feel like - and that is just from experience and chatting to friends who also make homemade combucha- it takes a few rounds for the Scoby and the bacteria to acclimate. So from my experience the taste got much better :) and also, I prefer using white tea actually! Have fun 🌞 and also; lovely video 🥰
