  • Fudgy One Bowl Chocolate Cake Recipe 🤤
    Ingredients: (makes x4 5 inch layers or x3 6 inch layers, can be scaled up or down as needed)
    220g plain/ all-purpose flour
    160g sugar
    160g light brown sugar (adds a distinct caramelised flavour and moisture)
    55g dark cocoa powder (for a rich chocolate flavour)
    1.5 tsp baking powder
    0.5 tsp salt
    80g melted butter (this helps give the cake better robust structure as it solidifies at room temperature whereas oil stays fluid)
    100g full fat milk
    100g full fat Greek yoghurt/Soured cream (helps keep the cake moist and contributes to a tender and soft texture)
    2 medium eggs
    1 tbsp vanilla extract
    200ml coffee made with 2 tsp instant coffee powder (coffee will help bring out the chocolate flavour)
    Combine all dry ingredients and whisk. Add all the wet ingredients except the coffee and whisk. Once combined, add the coffee. Whisk again until combined. The batter will be a thin consistency and glossy. Pour into prepared tins and bake at 350/150C fan until a toothpick comes out mostly clean, and the cake begins coming away from the sides of the tin. Baking times will vary depending on the depth and size of tin. It'll be anywhere between 25-45 minutes.
    Cool at room temperature for 15-30 minutes (again, depending on the size of cake). Turn out onto a wire rack or parchment paper to cool completely.
    Can be stored in the freezer wrapped in saran wrap and aluminium foil for up to 3 months.
