If you’re looking for a rich, fudgy chocolate cake to satisfy your sweet cravings, then this cake IS IT! Paired with an indulgent chocolate fudge frosting, this is by far the best chocolate cake I’ve ever had.
INGREDIENTS:

Chocolate Cake
▢1¾ cups (210 g) flour - regular all purpose
▢½ cup (50 g) cocoa powder - unsweetened
▢1 tsp baking soda
▢1½ tsp baking powder
▢½ tsp salt
▢¾ cup (170 g) unsalted butter
▢1¼ cups (200 g) dark chocolate - I use 50% dark but any good quality semi-sweet chocolate will work
▢⅓ cup (80 g) milk - cold
▢1½ cups (300 g) white granulated sugar
▢1½ tbsp instant coffee powder
▢⅓ cup (70 g) unflavoured vegetable oil - I use canola oil
▢2 tsp vanilla essence/extract
▢3 large eggs - room temperature
▢½ cup (110 g) hot water
Bake at 180C/350F conventional for 38-40 minutes. If using a convention (fan) oven, reduce the remperature to 160 °C (320°F) with the fan on. Remember to grease the bottom and sides of two 8 inch cake tins (mine are 3 inch deep), and also line the bottom of the tin with baking/parchment paper.
IMPORTANT: Do not open the oven door too early to check the cake otherwise this can cause the cake to sink in the middle. Enjoy :)
Chocolate Fudge Frosting
1 cup (226 g) cream
4 tsp cocoa powder - unsweetened
2½ cups (400 g) dark chocolate (50%)
1 cup (226 g) unsalted butter
1 cup (170 g) icing sugar - also known as powdered sugar/confectioners sugar
½ tsp instant coffee powder
½ tsp salt
2 tsp vanilla essence/extract

Made this cake yesterday, delicious but for those of you wondering, it does not refrigerate well due to the chocolate in it... if you are going to make it I recommend eating it the same day or else it will turn really hard in the fridge. Great flavor though👍
Y u putting cake in the fridge?cakes can stay out of the fridge even for one week ,rule number one on cakes do not put cake in the fridge.
how about if taken out of the fridge and rest it back to room temp, do you think that will be ok?

@CakesbyMK fan on mode means convention mode with fan symbol? I tried this cake with only the fan symbol, but it took lot more than 35 mins as the center took long time to cook and top layer became crispy and i used exact measurements from written receipe
Hello MK. I am a retired 72 year old who has taken up baking quite recently. The best part of your recipes are the measurements and the settings for convection mode. Hey MK, i tried this. However my cake just broke into pieces.. but i still went ahead and made it and i have to tell you this was amazingly delicious...not sure why my cakes fell apart though...i think I'll bake it with a foul on top for another 10 minutes more next time
Oh no! So so sorry to hear your cake broke into pieces :( this is most likely due to the cake batter being undermixed. I would recommend mixing for a little longer to help develop more gluten in the batter and this should help it stay together :) hope that helps and glad you enjoyed the cake :D

I tried this recipe on last Sunday. I used dark chocolate 65%. It's so delicious, but I think it was a little too sweet for me. I guess next time I will use dark chocolate 75%. Thank you very much, MK.

Hello..all your cakes I tried turned out amazing..but when it comes to this chocolate cake..it was bit dry on the edges and not soft .my oven is fanless so I baked at175’ as u said.. can u please give me an idea to completely avoid this problem...
I always thought the frosting is tough, you either need one of those hand blenders or elbow grease...but yours looks perfect and seems easy to make

Hi, I made this cake and no wonder your husband loved it. So far this is the BEST chocolate cake recipe I have made and thank you so much !!! I used the half recipe and used the oven temperature and baking time as mentioned in the recipe but after 30 minutes cake was raw in the middle so I increased time to extra 10 mins. The top of the cake was slight crunchy kind of but the taste of the cake was simply awesome. I will make again and again to get to perfection 🥰
Hi Selina! So so happy to hear you enjoyed the recipe :D if you don't have a fan function on your oven you will need to increase the temp to about 175c to ensure it cooks through :) and yess the cake does have a kind of crunchy top so that's normal :D

I've never ever liked dark chocolate in any combination :( is there any way to replace the dark chocolate with milk chocolate (but without increased sweetness and without too much change in the texture of the fudge)? :(

I’m 4 years old and I’m enjoying making this cake with my dads famous herbal remedy.
I made this yesterday and applied the ganache today, I followed your recipe to the letter (using grams) and apart from oven issues on my end, it's exactly the same. For my reference in the future I think I will add 50% dark chocolate and 50% milk chocolate and forego the coffee granules. And for the further future I'll try it with only milk chocolate
Hiya, did you try it with just milk chocolate? I didn't like the icing because I'm not a fan of dark chocolate, so I also want to try it with just milk chocolate but worried that I'll affect the consistency.
@@idamarie8108 Hi, truth be told I never made it again. At the time I did think that the dark chocolate would be too bitter hence why I said I would make it with milk chocolate the next time. But in all honesty the chocolate that I used didn't have that much more cocoa in it to make it more bitter. If you've never made it before stick with the dark choc method, the amount of sugar offsets the bitterness. Or, go for broke, and do the milk choc variant and get back to us!

Why do you use unsalted butter then add salt.
Salted butter is very salted
So you can control the saltiness. Depends of the brands, different brands have different saltiness(even same brand has different saltiness).
So you can have control of the salt. You can use salted butter, just remember no to add the 1/2 of salt. Personally I always use unsalted butter. This chocolate cake is my family favorite. Right now I'm making a review of the recipe, because I'm about to go to the kitchen and get ready to make the cake for my husband's birthday. I never have powder coffee (we drink the real coffe
e😊), so what I do I brew coffee and use a half of cup of coffee instead the powder coffee or water. I hope I helped you out, even is 11 months later 😊
If you use salted butter, you don't need to add salt. To control the salty taste.
