    Ampalaya may probably be the least favorite amongst all popular vegetables. But I am lucky to grow up in a household where we were taught how to prepare and eat vegetables especially ampalaya. Upon observing, most people who don't eat ampalaya, at one point, were served with overcooked ampalaya or ampalaya that is not prepared and handled correctly and this results into a overpowering bitter taste instead of a subtle one. In this recipe, I'll show you my version of atchara using ampalaya. Pickled Ampalaya or Atcharang Ampalaya is a great nutritious side dish to your fried or grilled fish and meat dishes.
