Potato Cheese Pancake, Irresistibly Chewy and Creamy (Korean Hotteok)

  • Welcome to my channel! Today, we're making the viral Korean potato snack: potato cheese pancakes. I've made a small tweak to enhance the chewiness of the pancakes, and I'm sure you'll love my recipe!
    Ingredients:
    300g potatoes (2-3 potatoes)
    90g tapioca flour
    45g milk
    10g sugar
    A pinch of salt
    Steps:
    1. Peel, chop, and boil the potatoes until fork-tender.
    2. Mash the potatoes.
    3. Add the tapioca flour, milk, sugar, and salt to the mashed potatoes, and mix well.
    4. Evenly divide the mixture into 6 portions.
    5. Take one portion, flatten it, and add sufficient mozzarella cheese in the middle. Wrap the cheese well and shape it into a small pancake.
    6. Fry the pancake in butter or cooking oil over medium heat until golden brown on both sides.
    Notes:
    The traditional method uses all-purpose flour or rice flour, but tapioca flour will boost the chewiness. If you prefer regular flour, use the same quantity.
    I add a bit of milk to enhance the creamy flavor of the pancake. However, this will make the dough a bit wet. You can add more flour if it feels too wet, but do not press the dough with force, as this will make it stick to your hands. Be sure to handle the dough gently.

    注意事项:
    1. 传统方法使用通用面粉或米粉,但木薯粉能增强嚼劲。如果你更喜欢用普通面粉,那么用量保持不变。
    2. 我加入了一点牛奶来增添饼的奶香味,但这会使面团有点湿。如果觉得太湿,可以增加面粉,但不要用力揉压面团,否则非常会粘手。轻轻操作面团,也可以把面团包成型。
