Gordon Ramsey would be proud of those eggs. He always says that to know if someone is a good chef they have to be able to make creamy scrambled eggs and this dude sure know how to make them.

That tip with mixing the butter with the eggs BEFORE heating was huge. I have steadily been improving my egg recipe but I had never heard that piece of advice before and it turned out great.

Guessed sandwich 1 and 3 right away. Wasn't sure about 2, until Sean said artisanal, and then I was like, "Probably, Starbucks." Can't think of any other major East Coast chain that could be accused of making artisanal breakfast sandwiches.

I've been cooking my eggs with butter lately rather than oil (I'm done with sprays) as well as on medium-low heat and using a rubbery spatula and I've already noticed the difference in my eggs. But starting with a cold pan is something I never considered.

He means that the Starbucks breakfast sandwich shouldn't have cheddar, because once stored & mass-produced, it loses its moisture - whereas American cheese is processed, and keeps its "gooey-ness." Alvin Cailan's breakfast sandwich is fresh, so the cheddar is okay.

I enjoyed watching his technique for cooking the scramble.
I made his version of this sandwich and holy shit it was really good. It's become one of my new regular breakfast go to's now! I use lightly toasted challah bread instead though since it helps maintain structural integrity and the fluffy texture of it really suites the smooth eggs. I also put the siracha mayo on both slices (as well as adding a bit of soy sauce and lemon juice to the mayo mixture). I also use both cheddar cheese and havarti cheese. The sharpness of the cheddar does a great job at cutting through all those other flavours and the creaminess of the harvarti really suites the texture of the sandwich.

Good luck on finding the perfect method to making them, it's a bit tricky for awhile to get them to that texture while being thoroughly cooked.
I used to work at sonic and we'd "finesse" the cheese like that all the time for the grilled cheese sandwiches, that move is legendary tbh.

It's really nice to see someone make proper scrambled egg, you go to any pub or restaurant in the uk and they will always give it to you overcooked, and people freak out when they see proper scrambled egg, me response to them is always "you might as well make an omelette and chop it up.

I think no one would argue with you that Cheddar is the "better" cheese. But his whole point is you use the right ingredient for the right dish. American cheese has its place - I prefer american cheese in my burger and breakfast sandwiches because it gives a nice cheesy taste and the meltability gives the sandwich a whole different texture.

My hypothesis is that the egg provides enough wet when you just barely cook it. That egg is at the very beginning of scrambled whereas the sandwich he was complaining about had probably a fried egg in it. That being said, anything with scrambled egg in it I will eat with a knife and fork because you will lose 50% of the egg eating it with your hands.
