      Melissa K. Norris - Modern Homesteading It may be a more advanced goal but I make a pretty tasty spaghetti sauce and salsa I’d like to eventually learn to can. 😊 Maybe I’ll start with asparagus though- our homestead has it growing wild! 🌱

      Ive been collecting and growing heirloom beans for quite a while. Back in the 90s I had purchased some large packs of seeds from the Vermont Bean Seed Company and put them away as a prepper type item and they had somehow gotten put way back in the corner of a storage room in my basement and completely forgotten about until about ten years later . By this time the company was no longer carrying these beans and was now selling very few varieties . One was from Switzerland , Berner Landfrauen and another was named Selma Zebrina. Was having trouble getting these to sprout and thought i'd just find them easily on the internet but wasnt finding them anywhere. I finally got some going and was able to save enough seeds to keep this heirloom viable.They are mostly rounded but with a bit of flattening , medium green with purple streaks. They look very much like the Rattlesnake variety but taste different, although Rattlesnake is also Very good. It appears that the Berner Landfrauen are starting to be availiable again here and there but mostly only from European seed companies.
      A few years ago I was doing some trading of seeds on one of the seed trade sites and gota hold of some beans that the grower said was only found in eastern Kentucky and Tennessee against the Smoky Mountains . She called them Old Time German Beans. The are large pods that are almost like a cross with a Romano shape and they are mottled with purple with some being mostly purple. They have a cream colored seed.
      I had also gotten a variety of Cornfield bean in trade that I was told could grow well in shaded ares. I have a thirty foot CB tower on the north side of my house and these beans will climb all the way up the tower and then another ten feet up the mast pole and out onto the BC antenna. Forty foot tall bean vines in a very shady area , loaded with beans all the way up ! I let the top ones always unharvested and use them as the seed crop for the next year. If I had a barn or some place where I could hang a net you could easily cover a whole two or three story wall completely with beans.

      Hi, Melissa Ive canned like 25 cans of blue lake bush beans this year and around 20 cans of tomatoes, gave alot to my sister and her daughter. She still cans for her family, we just cant forget our raising. Growing up in western n.c. we always raised hogs and some times a beef, squirrel and ground hogs, baked with spice wood. young lady it makes my heart so happy,, to see your videos, your family working so hard and makeing it..     As a little girl in the Appalachian region of Eastern Kentucky, I remember sitting on the porch with my grandmother and great-grandmother stringing and snapping beans from the large garden that fed the family. I believe those pole beans you grow are known regionally as greasy beans and there are several varieties such as the one your family brought with them. In one of your videos I caught a quick glimpse of why I think yours are the greasy and that was the shiny skin. I've taken up growing them myself but had to contact a cousin to send me some family seed to where I live in Oregon. Yes, they are prolific growers! This year, I dried a big batch of them in the traditional Appalachian way using a needle and strong thread. Have you done this too? When they are cooked from dried they are called shucky beans or leather britches.

    We have a pole bean that has been saved and grown near Jamestown,TN. For a very long time. It is large, has strings a BROWN seed and is delicious! The vines just seem to keep growing! The are called Butcher Knife! Not at all the same as case knife. I don't usually plant anything else. I do have an old, old variety of half runners, too. I usually alternate years on my beans.
    I gave some seed to Bill Best, up in KY. I've never heard a word from him again.
    I love planting, canning and EATING all our vegetables. Sometimes I can the green beans with a tasty broth, so I can make faster beans. I usually add quartered potatoes to the pot before I add my green beans. We like it that way. Glad to know we aren't the only ones doing this! Great video! GOD bless

    Mam you do such a great job canning, your kitchen is so neat and clean, Im a 62 year man , and love to can beans and mators, cant get the okra thing yet, maby you might have a video on canning okra, you do a great job lady and im so proud of you,, GOD BLESS you and your family. keep up the great work,,James frm north carolina

      Thank you James, unfortunately we're too far north to grow okra here in Washington so I've never gotten to can it or eat it fresh (I know I'm missing out!). What's your favorite way to cook it fresh?

      Ilike the cherokee purple tomato and half runner green beans always had those around all my life, i have too put alittle butter in them now , because of my heart problem, BUT its all good, ive lived to see another day,, JAMES@@MelissaKNorris

    Oh my goodness, your story about your grandparents and the beans is so much like mine. I love that you shared that precious part of your gardening history.
    When my grandfather came to North America, he brought bean seeds from either Italy, or Austria and we've always called them Grandpa's beans. They are deep green with purple stripes and I recently learned that people refer to them as Dragon Tongue beans. Like yours, they have a very different flavor than anything I've ever tasted and they produce so many beans that I'm always busy canning.

    Thanks Melissa! I have seeds for a brown pole bean that’s been in my family for generations. My mom called them “cut shorts”, but she didn’t know what kind of bean it was. I was not able to raise a garden this year, but I did plant some of these green beans for seed. I want to make sure I don’t run out!

    We haven’t saved heritage beans but my father passed away in 1998 and he had given us or left in his garden watermelons I have been saving. I have been saving our okra seed the same way when we lived in our first house together we lived there for 25 years. And then we moved to our new home in 2002 and have continue to raise and save seeds. My mom and dad and all of our siblings worked in the garden we had a huge garden. That’s because we had a huge family. And we canned our vegetables out of that garden and they were delicious and so my husband and I have continued doing the same thing.And now we love seeing your flowers we save the seat off of them and planters a row of flowers in our garden and love it! And if you ever have any extra Tarhill beings I would love to be a recipient of them. Thank you

    I've been canning green beans like this for years, and yet I still sit and watch the whole thing because it's like a visit with a new neighbor. Well, you are just one county over, so I guess it is. My story probably isn't great, but I have been saving seed from a sport tomato plant that volunteered in my garden a few years back. The plant produces a yellow and red striped tomato shaped like a plum tomato but fatter at the midpoint like an Opalka. I have no idea what it is, as I never planted it originally, but since it looks so much like Opalka in size and shape I think that has to be one of the parent plants and possibly a Lillian's Heirloom yellow because they were planted biointensively together. Otherwise it was planted by a bird who ate a tomato seed elsewhere. It's hearty, too, grows long into cold weather in October, though not a hard frost, but up to one. I am always finding volunteers and never knowing what they are, but this was the only one I decided to save. I hope to be saving it for years to come and be something I can pass down to my kids and possible future grandkids. It is very tasty.

      There are 2 kinds of greasy beans. One is a smaller bean than the other, both white and super tasty. Good chance for it is an old timey bean and becoming less known due to industrialization.

    I would love to buy some of your heirloom green beans. I'm a new subber and excited to learn from you. I have seen others can and do things that you advise not to. I'm a disabled RN, and am new to canning, but I'm excited to be buying veggies and canning them for the winter months. I prefer no preservatives or additives, but we were away this summer and I could not grow a garden. Last year my first garden didn't produce well.

      Hi @Irene Retired even if you're not growing them getting your produce and preserving it is still a great way to get ahead. Unfortunately a lot of people don't understand the reason or the safety on proper canning protocol, but good news, most are willing to learn when they realize WHY something is incorrect.     Thank You Melissa for showing me how to can. I so appreciate your sharing your expertise. I remember helping my family can tomatoes every year, but you're right, especially in California where land it at a premium, no one grows and cans their own produce. I have returned to my roots and have begun gardening my small property, growing more each year. I will begin canning next year, as a bout of cancer interrupted this year's plans. I want to join your group, but cannot afford to at this time. So all these videos are very helpful to me. Question: what is your faborite variety of Snow Peas? and How do you put them up? I've been told freezing is the best way. Is that what you recommend? Thank you for your time and expertise.

      What makes a seed heirloom is the variety has been around for usually 50 years and more importantly, that it's open-pollinated and comes back true to form.

    I have a small garden and we grow a lot of green beans. I have to agree with the other folks about the 5 generation seed I think that is so awesome. Kinda wondering if you have any pictures that date all the way back to the first generation

    You might want to put bungee cords across the front of each shelf to secure the bottles better in case of an earthquake.

    I pick our beans young & tender and preserve them in salt, they last us through the winter months, I’ve recently been told that they’re really bad for us done this way but canning in the U.K. doesn’t appear to be that popular, I wouldn’t mind trying it though

    This was great! I have a big bowl of green and purple beans to do something with and was too scared to try pressure canning (very new to it). I think I'm going to go for it! I'm assuming I can mix the 2 different beans together? Please let me know if I'm right (or wrong). Thanks! Would love to see more videos like this (both pressure canning and just putting up food). Also would be very interesting it getting some of those beans if you ever decide to grow enough to share with people - maybe another video showing us how to save the seeds.

      Hi @Tiffany Krievans as long as they're a fresh eating bean then yes, you can mix yellow with green, etc. When the beans get closer to seed saving I'll try and to do a video.       Thank you, I was recording it when my kids were still sleeping in early morning and I didn't want to wake them. For the beans I will share about being able to join the Pioneering Today Academy and that's where I give the bean seed as a bonus when joining, unfortunately with our state laws and regulations on selling garden seed, I'm not able to do so outright. And yes, they should grow in zone 3 but you might have to start them under a cold frame, they need about 60 days before they produce.

    What a wonderful video! Do you think these would do well in zone 8a? I grew up with grandparents who dried their beans on a hill side or strung up in the cellar. Have you ever dried these or always canned.

      I've done dried leather britches but we prefer the texture of canned the best. Yes, they should grow just fine in zone 8a

    Can you double-stack 9 jars over 9?
    Do you label your jars with a date?
    We have a family of 7- do you recommend using pint or quart jars?

      Yes, if using regular mouth (not wide mouth) you can fit 18 pints in with 9 on top and 9 on bottom. I rotate through my green beans (I have a front pantry that last years is in and won't move up this years until I go through them) so I don't usually mark the year on the green beans as I know how many we use in a year. I will date some of the other items we don't use as frequently. For a family of 7 you'll want to do quarts I think. A pint is only 2 cups and a quart is 4 cups.

    Hi Melissa! You seem to really know your stuff, I've learned a lot already, thank you. 2 Questions: can I can tomatoes that I roasted the night before and we're refrigerated then warmed to room temperature? #2 can I use tomatoes that were roasted with a pan lined with olive oil?

      Hi Jean, yes, you may can tomatoes that you roasted the night before as long as they're brought back to the correct temperature for canning (I don't know if you're planning on doing tomato sauce in which case you'd be simmering them down, this is my video on canning tomato sauce ua-cam.com/video/or_YwwmSPEg/v-deo.html ) or if you're doing a raw pack tomato method than room temperature is fine. As for canning them when they've been roasted with olive oil, the answer is no. Olive oil is a fat and a non-acidic ingredient so it's not advised to can products that have been cooked in it.

    Hi Melissa, I purchased your book and it has been a great guide, thanks for writing it.
    Have you ever used reusable canning lids/gaskets? If so, what are your thoughts about them? I have really canned a lot more in 2023 than any other year, and I can't help thinking about all these single use lids. Which, I have found out, are not recycleable.

    Did you mention somewhere that jars don’t need to be sterilized if you are pressure canning beans? And what about the lids. It looked like you just took them out of the box & used them without washing or simmering in hot water. Thank you!

      @Niecie Yukiye if you're canning for 10 minutes or longer you don't need to sterilize your jars. It was about 5 or 6 years ago they changed the lids and you don't heat them up before using. I just use mine straight out of the box or sleeve (I buy them in bulk now in sleeves of 200+)

    I just bought my first pressure canner, I am very cautiously learning as much as I can, and u say so u don't have a pressure canner blow up... Really?? They can really blow up? How likely is that to happen?

    I love this! I had never thought to shell a few beans to add into each jar! I wonder if it is as good using other beans as it is with your Tarheel beans??
    One question- I noticed you don't label your jars. I was taught to label everything, at least with the year, so I was sure to use the old before the new. Do you ever do this with your home canned goods?

    Have you ever fermented green beans? Would you agree that this would be not only safer, but retain most if not all of the nutrients in the bean?

      No, not safer, as long as you follow the tested times and use a pressure canner then it's very safe and actually pressure canning still retains a lot of the nutrients and green beans aren't something you should comsume a large amount of raw. Fermenting is great but I don't want the flavor of fermented green beans in my soups and other dishes, only as a condiment. I don't have the cold storage space for over 50 jars of fermented beans either.

    Just wonder how they taste like. Do they taste like just boild fresh beans? Never try canned beans before. But I'm interested in preserving food for my family, wonder if we would like them canned

    How many square feet of garden space do you have dedicated to the beans?? The GF and I are limited in the area we have and grow in three 5X3 raised beds.. one of which is beans only..So far we have been "bush" beaning but can't get much more than a couple meals a week.. and would happily switch over if you have a small "foot print" with your pole beans

      Hey @Kevin Rehberg pole beans generally put off a LOT more produce than a bush bean and are a great candidate for smaller foot prints. On one bean teepee (I have a video here of making the teepees ua-cam.com/video/ZtIC5jGrxek/v-deo.html ) I get about 16 plants, 4 around each post, including the center one.

    So I’m a little nervous. I just canned some beans according to your instructions. However, several of the lids are “buckled”. Why would that happen? They are not brand name lids but they are brand new. I’m so upset after my hard work. If you’re not sure what I’m talking about let me know how I can send u a pic. Also, as they cool and make that “sound” they go flat and look normal. It’s not the normal ping sound, it’s more of a loud clunk. Are they safe to consume? I will wait till tomorrow to check the seal and get back to you.

      @Niece Yukiye, if the lids are buckled it's because you tightened the bands too tight, they should just be tightened to finger tip tight, meaning with your finger tips screw them down and don't over twist the threads, stop once you feel resistance. The lids should be evenly flat once sealed, no buckling or creasing. If they're buckled you can either reprocess or move to the fridge to eat right away. If they're sealed correctly (no buckling) then they should be fine. I don't know what yours look like so I can't say for sure if they're fine or not.

      Safety wise, technically yes, but they're going to be VERY soft from being frozen, thawed, and then canned, so you may not like how mushy they are.

    I think you mentioned before that you have well water and don't have to worry about calcium build up. But I have city water and it's really hard. Can I use a little vinegar in the canner to reduce the build up?

      @Tami Williams yes, you can use up to 1/2 cup of vinegar in the water inside the canner to help reduce the calcium deposits and hard water stains. Though when canning tomatoes you'll not need it, they always turn my pressure cannner insides to silver again 😉

    Pressure canning scares me. For me, if it needs to be pressure canned, I prefer to freeze. So, I will be freezing my pole beans, which really are not doing too well this year. Likewise, peas, kidney beans and chick peas are frozen as well.

      No, pressure canners have weights for 5, 10, and 15 lbs based upon what you're canning and your elevation. Pressure cookers don't have a way to select specific pounds
