Three things missed in this: Tregara, mantis like giant arthropods. They had cities at some point. Gotrek slays one that had grown larger than any giant in its slumber. Zoats. Possibly the progenitors of Dragon Ogres. Viydagg, life elemental and possibly only preceding "god" not later subsumed as an aspect of chaos. Admittedly a touch meta oldhammer though
I never realised The Sleeper from Orcslayer belonged to a species that existed in lore. I always just assumed it was meant to be really mysterious and "out there" on purpose.
A bit late but here are more missed races. - The animals of the Ogres are all implied to be ancient (e.g. Rhinoxen, Stonehorns, Mournfangs) and the Thundertusks are confirmed to be pre-Old Ones. - The Borrowers/Dreaming Ones from the Darkblade novels. Big worms that eat through rock. They retreated under the mountains of Naggaroth, to wait out all of this comotion. - Arachnaroks. - Many gigantic sea creatures in general. e.g. Kharibdyss, Leviathans (the BIG crabs) and Kraken (Triton might be too). - Drachenfels was originally very apelike in appearance and lived before the Old Ones came. Technically he could have been a yhetee but he is more implied to have been a primitive proto-human. - Orks, Goblins and Squigs maybe? They all hate the sun a lot. They hide from it in caves and under canopies, while those who don't call it the "evil sun". They were from the Southland jungles before the Chaos Dwarfs took them. (I like this explanation better then ,their spores came with the Old Ones'. I don't like the very forced connection to 40k.)

When it comes to the beasts of burden used by the Ogres I considered them but based on the fact that the Thundertusks were warped by chaos, and considering their geographic spread and appearance, I am inclined to think the are Warp-Addled Mammoths rather than a separate species. I couldn't find evidence of the Stonehorn before The Great Catastrophe or Rhinoxen, though I agree they were likely present. Mournfangs were a crossbreed of Rhinoxen and Sabretusks presumably, all three of which were first noted in history during the Great Migration, well after Chaos arrived. The Issue I have with Drachenfels is that he is self reported as being that old. All other evidence points to magic not being a factor prior to the Coming of the old ones building a hole into the immaterium, neither Dragons nor Fimir report using magic prior to this time despite both doing so in the modern world. He may very well be that old, but as he built nothing lasting and had no people to carry his story older than a couple millenia past I am inclined to think of him as a chaos demon rather than the scion of a lost race. Then we come to the Dreaming ones. I actually meant to include a whole section on them and whether they are related to the Chaos-infused Dread Maws but then straight up forgot :(. It would make sense, they are worshipped with blood rituals, just as the Dreaming Ones, and they are found across the world, with reports in Naggaroth, Sylvania, Cathay, and Ind. That Ill have to explore in another video!
How about 'Warhammer' post-Old Ones but pre-Chaos, when the Old Ones conquered the planet. Back when the Gods walked the earth and Athel Loren became sentient. Pre-Old Ones lizards being used to make the Lizardmen. Elves were just tutored by the slann and were freshly moved to Ulthuan, living in the woods in kiths. Dwarfs living on, not in, the mountains with their god ancestors as a warrior people. Humans on Albion being thaught magic by the Slann (pale skin because of experiments maybe?). Dark skinned humans already existing in the jungles of the south. Im spitballing here but: Humans being used as stock to make the other humanoid races. (Somehow losing their pigmentation as a side effect of being experimented on, thus explaining why all humaniods races, exept Southmen [and Pygmies], are pale of skin. Albion being one big isolated lab.) (Might be the reason the Old Ones came in the first place. Humans might have a special relationship with the Aether/Warp/Chaos or might be especially mouldable/flexible in how their connection/reaction to the warp manifests.)
It was briefly possible to have an entirely fimir army towards the end of 8th edition. There was the Balefiend, nobles and warriors the latter from Forgeworld. Wouldn't have been very diverse but thematically you could have thrown in some demons as well

It could be fun to have a Fimir, Dragon, Dragon Ogre, Giant kind of Path to Glory style campaign.
