Soft, Chewy Banana Cookies that AREN'T Cakey

- With a rich banana flavor and soft, chewy texture, these Banana Cookies are a unique and fun twist on a traditional chocolate chip cookie.

Ingredients
⅔ cup well-mashed, very-ripe bananas (185g, this is typical 1 ½ bananas for me)
1 cup unsalted butter, melted and cooled until no longer warm to the touch (226g)
1 cup light brown sugar, firmly packed (200g)
⅔ cup granulated sugar (135g)
1 large egg yolk
2 teaspoons vanilla extract
3 cups all-purpose flour (375g)
2 Tablespoons cornstarch
½ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon table salt
¾ teaspoon ground cinnamon
1 ½ cups chocolate chips (use either milk chocolate or semisweet, or a blend of the two!) (255g)
1 cup chopped walnuts, optional (115g)

Instructions
00:00 Introduction
00:25 Combine well-mashed banana, melted/cooled butter, brown sugar, granulated sugar, egg yolk, and vanilla extract and stir well until completely combined.
01:54 In a separate mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, and cinnamon.
02:15 Gradually add flour mixture to butter/banana mixture until completely combined (I do this in 3-4 parts).
02:32 Add chocolate chips and walnuts, if using, and stir until well-combined.
03:08 Cover bowl with plastic wrap and chill in the refrigerator for 30-60 minutes (or up to 24 hours).
03:18 Once dough has nearly finished chilling, preheat oven to 350F (175C) and line a baking sheet with parchment paper.
03:27 Scoop dough by 1 ½ Tablespoon-sized scoops and drop on prepared baking sheet, spacing at least 2” apart.
03:52 Bake in 350F (175C) oven for 12-14 minutes. Allow to cool for 5 minutes on baking sheet then transfer to cooling rack to cool completely before enjoying.

Store cookies in an airtight container at room temperature for up to 4 days.

I made this yesterday and it was really good and tasty. I was worried it would be cakey and that I would barely taste the bananas but the banana flavor shined through. It was just the perfect banana flavor that matched with the chocolate chips and the walnuts I put in. I really recommend this recipe. Since banana is a delicate ingredient I’d suggest actually measuring your banana and making sure everything is exact for the best results. It’s amazing how it tastes just like banana bread but in a soft cookie form. Thank you so much for this recipe.

I tried this...I didn't have butter so i used avocado oil, didn't have corn starch either. I used oat flour instead of white and coconut sugar instead of regular sugar. Came out great. Thank you for your recipe and tips.❣

Looks amazing! A chewy cookie is always the best! Meltss butter always accomplishes this! Question, instead of chocolate chips, do you think doubling the nuts would work just fine? A combo of walnuts and pecans or all walnuts? I have some family that are not huge chocolate chip fans. Caramel bits too would be great instead.
I think those substitutes would work just fine. Really any combination will work. 😊😊

Years ago in the mid1980's, there used to be a bakery called The Cookie Factory in Midtown Manhattan, NYC that sold large banana walnut cookies. They were absolutely delicious. Unfortunately, they are no longer in business. I have been searching the internet to find a recipe for banana walnut cookies that taste like the ones from the Cookie Factory. Hopefully, yours taste similar to the ones that the Cookie Factory sold.

Sure thing! You’ll want to bake them on the same temperature they just may need a minute or 2 longer.

Personally, if I were to make these again I would only put the brown sugar in. I love sweets, but these were way too sweet for me.
Would a raisin and granola mixture work too?
It really depends how you plan to add it but it could work.

Hi Sam. What altitude are you at where you live? I am at about 6100ft. I usually try a recipe as listed to see how it comes out before I alter it for high altitude.
I’m only at around 1500 feet so unfortunately I don’t have many suggestions for high altitude baking. 😔

How many times do you make a recipe before it is perfected?!
O it varies from recipe to recipe. Some I can nail right away, others take quite a while. I have a pumpkin roll I’ve been trying to perfect and make better than the version on the can and I think I’ve tried that one 30 times with no luck

Sorry I missed the flour. Since the cornstarch is 2 tablespoons I don’t really have a weight for that, but I fixed the flour

Why is the corn starch needed? What happens if I don't use it?
The cornstarch helps make the cookies a bit softer. You can substitute flour for the corn starch if you don't have any on hand. :)

Mine also stayed more rounded not as flattened/ chewy...I only cooked 1/3 the dough to test...
the rest of the dough does not have flour added yet... should I add more liquid (butter) or just a little less flour?
Otherwise mine taste good & the bottoms crisped up nicely.
