    Hi guys, so I made this twice. The first time they came out very hard.
    I am not sure why the original recipe didn't work for me.
    So if you are in the same boat, try a few tweaks:
    1. Banana must be super ripe
    2. I preferred bread flour. It has dough conditioners that make bread softer. But obviously it is not necessary. Just a preference.
    3. I Bloomed my yeast in like 2oz of warm water before adding to flour. Again depends on the yeast. If you have fast acting don't need to bloom. I had active yeast.
    4. I reduced bake time (my oven is very hot).
    The second time they came out perfect.
    Thank you for the recipe. Super easy and very delicious.
    I will try cinnamon and chocolate variations as per many comments
    P.S. Make the original recipe first. Many people said it work perfectly fine for them.

      For mine, i boiled the raisins with cinnamon and nutmeg for 10 minutes. It taste so good :)

      In regards of #3, for how long you keep the yeast in the water? What is the temperature of "warm" water?

      @@Flecha57 Yes, usually yeast is mixed in warm water. Not super hot.

      @@Flecha57 Usually when making bread we need to leave the yeast in warm water until it foams, so like 5 to 10 minutes aprox

    These look amazing. When baking with raisins, I like to soak them in a half cup of water the night before so that they plump up. They stay soft through the baking, keep the bread fresher longer, and if they stick out from the dough, they won't burn during baking.

      Also another idea, I boil the raisins in rum, vanilla and spices like clove, ginger and cinnamon. They are like yours plump plus flavorful 😊

      What does "cover and rise" mean? Do you just leave them out or do they need to be refrigerated?

      @@cynderellylastname6060 you can put cling film over if you don't have a lid. Just leave to rise - for ingredients to activate and grow before continuing. Room temperature is best

    This is the way to do cooking videos! Just start right in without an introduction, nice simple music that isn't overbearing (or even none), ingredients names and quantities on the screen, show how to do specific procedures, nice close ups of completed product. I'm not there for face of the UA-camr or their lives, just as a cookbook is about food, not the author.

    Popping the whole unpeeled bananas into the oven for a 15 mins ripens your unripe bananas easily. It's so super soft.

    I always make my own bread (usually whole wheat loaves and occasionally French bread and challah) and all recipes call for some form of sugar. But no sugar in these! As I anticipated, the bananas provided a subtle sweetness without turning the rolls into anything like banana bread. Brilliant! The recipe is extremely accurate. Mine emerged from the oven just like the ones in the video. I used bread flour to be sure they were light in texture and I dissolved the yeast in a little warm water before adding it, but it probably was not necessary. I skipped the raisins, but might use currants in the future. This was a real find! I have definitely subscribed!

      Sounds good, the currants. Wondering if pumpkin and a little nutmeg would work instead of bananas. My mom used to make pumpkin bread but would rather these rolls instead !

      You don't need to add sugar to bread necessarily. Try making some lean doughs (yeast, salt, water, flour)

      You could check with the bins that a grocer has generally in the back of the store. They are to get rid of fruit and vegetables at at discount as they need to get rid of before they go rotten. Good place to check for bananas and this way you could use then right away and not wait for them to over ripping in their own.

      Did you have to adjust the recipe? I used all the gram measurements and had to add a LOT more flour to have it come together. It is trying to rise now...Will see how it goes.

    Ok, so I had some bananas that needed to get used and normally make banana bread, but since I don't get to enjoy it as much anymore (it gives me heartburn and stomach cramps) I decided to check out other ideas for what to do with them. Anyway, found your video, and I am officially IN LOVE with these rolls. I just made my first batch and OMG they are SOOOO soft and fluffy and delicious. They will easily be my new go-to for using overripe bananas.

    These came out great, two times now!
    I had blueberries that needed to be used, so i added them instead of the raisins. That first batch came out a little dense, due to all the juice in the fresh berries. The flavor was still awesome...
    So next time i dried the berries, and the buns came out with the same texture as the ones seen in the video.
    Either way this is a great recipe, prefect mild sweetness without sugar, and any dried fruit should work well.

    If you're having trouble with these not rising make sure your yeast is still active check the date on the pk or put the yeast in a little bit of warm water and see if it blooms or gets a little foamy

      Yes that's how I do it with regular banana bread I drizzle honey on top after it's done cooking and then sprinkle cinnamon on top of honey.

      Why?
      Butter is good for you, especially in small amounts like in this recipe.
      Quinoa is great, but it is not wheat. PLENTY of ancient grains that we evolved with work, even some wheats.

    Thank you for the recipe Helly! I’ve made this recipe many times now.
    Recipes are a guide for us and I’ve made a few adjustments as have others, to tweak the recipe. I use 1 Tbs. sugar, 3/4 tsp. salt, 3/4 c raisins and 4 Tbs. of melted butter as increases to the original recipe. I think the extra butter helps the rolls to stay soft after the first day. Thanks again for sharing!

    These look delicious.
    If I don’t have time to cook old bananas I chop and freeze them and then use them in a smoothie with milk, rolled oats and espresso. Frozen bananas give a texture similar to ice cream without the huge fat content. It’s a great mid afternoon energy boost.

      I usually coat the banana slices with lemon juice before freezing, they may stick together more this way but adds a nice zip and they stay bright.

      Agreed. Flour is such a finicky ingredient too. Spooned v sifted v scooped. Very different quantities.

    Gurllll this is amazinggg! I tried it with putting in raisin, chia seeds and flax seeds. Mind blowing. I didn’t add any sugar but there’s this amazing natural sweetness from the bananas ❤

    I just made this as a loaf in my bread machine and it turned out very well indeed.
    I added a little coconut milk as the mixture seemed a little dry for the machine.

      I once made some other raisin bread in the machine but the sultanas I used scratched the teflon and removed parts of it. Had to buy a new baking form. So I recommend to soak the sultanas/raisins in water, rum or juice first.

      Actually they are very high sugar. Bananas and sultanas/raisins are very high on the glycaemic index. Not ideal for diabetics. Had she used stevia or xylitol then ok.

      @@maddwitch Thank you. People tend to give fructose leeway but the body still reads it the same as table sugar/white sugar. Its all sugar to diabetics and people looking to lose weight.

    I've actually made it twice. The first time I forgot the butter and the bread came out a bit dry.
    The second time, I used peanut oil (the same amount as butter) and also substituted 60g of banana with 60g of coconut milk (because I ran out of banana 😂). The bread came out perfect! It tastes so good as it is, and it's even better with some warm melted butter on top 😋

    Pro-tip: If you put bananas in a dough, you don't need to use eggs. Still gets fluffy and tastes yummm. I'm going to try this recipe! Thanks for the video ❤️

      @@nancydrew1102 an exceptional nutrient. Compared to the grain. Do you know, doesn't matter if you grind up a seed which is a grain. Genetically all it knows to do is uptake nutrition. So anyone that eats a lot of bread pastas or grains. Can be quite nutrient deficient.

      I usually add two tablespoons of applesauce instead of eggs. Works fab in muffins too.

      You can use a fork in the same way to flatten and leave a pattern on cookies or biscuits

    These are so so good -- the wonderful soft texture and light sweetness of banana! I add finely chopped walnut (1/4 cup walnut and 1/4 cup raisin). I am also experimenting with gluten free flour. Thank you, Helly, for your many wonderful, creative and fun recipes!

      @@moptopjen3528 They did not have the wonderful soft texture of the regular flower version! I would give the regular flower version a 10 for texture and taste; I would give these a three on texture and a six on taste.

    I tried making this and replaced active dry yeast with baking powder… the dough didn’t rise at all haha. I also didn’t keep them in the oven long enough and had to throw it all out. They tasted good tho! Even though the were too doughy lol. Gonna try again this week 👍

    If you're careful, you can "pre-smash" the bananas in it's peel, tear the end off and squeeze it out the bottom. 👍

    Game changer! I’ll never make regular banana bread ever again! This was amazing! I did add walnuts, 2-3 tablespoons of raw sugar and a tablespoon oh agave! I served it with a nutmeg almond milk powdered sugar drizzle fir dessert! Honey, creme anglaise, or even ice creme would work well! Or just plain out of the oven with a tad of butter! It was amazing! Thanks for the recipe!

    I used bread flour but the dough felt a bit dry so added a little milk. After 1.5 hr, the dough didn't rise as much so I added another tsp of yeast. However, the bread coming out from the oven is so soft and delicious and smelt so banana! My husband ate 3 of them in one go! He said he couldn't figure out the texture if it is bread, scone or cake :-) Anyway, thanks for the recipe!

    Literally just had my first one after it cooled a bit. Still warm from the oven and it was so nice. I added mixed dried fruit and some white chocolate chips for extra sweetness. So good!

    Ive never made bread before and suck at baking, and they turned out perfect. They kind of tasted like a rasin bagel. Thanks to the comment that said to activate yeast in water and add baking soda/powder.

      @@hoppas77 Most instant yeast packs will have the directions to bloom on the back. But you basically use hot water, a bit of sugar and the amount of yeast you need. The yeast will activate and eat the sugar and start bubbling up.

I had two over ripe bananas that I was about to toss today, saw this video, bought some yeast and combined with the other ingredients I already had. Now, this was my first time baking, but these rolls came out sooo good. Just a hint of sweetness from the bananas and raisins. I was pleasantly surprised that I could make this recipe. Thanks again!

      There is Vegg, or chickpea water (aquafaba), or 2 tables spoons of ground flaxseed mixed with 3 table spoons of water (equals one egg)... If you search online for egg substitutes for vegan baking you can get some great suggestions. Let's bake healthier & more sustainable future for everyone. ;)

    I just made these. I used 1 cup of heritage whole wheat flour and dried cranberries instead of raisins (my friend is allergic). Super easy and super tasty! I will definitely be making these again!

    Just made these buns following the video directions - came out great! Added applesauce & honey with bananas to meet weight requirement; also added a bit of vanilla, cinnamon, & nutmeg for flavor. Also soaked raisins in rum prior to adding. Such an easy recipe - will definitely make again!

    Yum first batch I made with dried Blueberries & cinnamon, them made with dried Apricots & white chocolate . I did add unsweetened almond /coconut milk as my double batch was a little dry . They were delicious thanks for sharing 😋

    I've made this recipe a few times and it's great! This time I mixed in some Peanut butter instead of raisins (you'll need a bit more flour because of extra moisture) and topped with a coconut cream chocolate ganache and dear lord I'm in heaven - would recommend if anyone wants to mix it up!
