Off topic: We had a record high temperature for December here of 70 degrees F (21 Celsius) a couple of days ago! I set my timer for 15 minutes and washed the outside windows with a swoosh of Windex and swipe of the purple rag. I got the 4 windows done in 10 minutes and had 5 minutes leftover to do the sliding glass patio door. So encouraged by the warm temps and cleaning success in record time, I headed to the front of our house and did the two front windows...10 minutes and done. It has dropped 40 degrees here since, and it is now 38 degrees F ( 3 Celsius) , just 2 days later. brrrr I am still trying to remember to pamper myself; THANK you for that reminder, Diane :D

got me with all the spices in this one Diane- especially ginger and cinnamon! mmm mm!! Baking soda, a component of baking powder have the purpose of fluffing up your baking once in the oven... Will give a lightness to your cakes and biscuits by producing more air bubbles (CO2) once in the oven.. Made this twice since Friday as they were promptly gobbled up by the family. Delicious!! Left out the pepper tho due to family preferences. The game Mus was very well received and is now asked for. Although being Canadian, Mus quickly degenerated into Moose! Lol thanks for sharing this recipe. It'll now be a tradition 😊
RECIPE You’ll need: One egg 125g of sugar (I used demerara today but you can use white, granulated sugar. Muscovado sugar would be too intense.) Beat these together in a bowl until you get a pale yellow frothy mixture. Then add this lot to the bowl: 250g plain flour 125g butter ½ teaspoon of baking soda (natron) ½ teaspoon of cardemom (stødt kardemomme) ½ teaspoon of ground ginger (ingefær) ½ teaspoon of cinammon (kanel) ½ teaspoon of freshly ground black pepper Beat again, then scrape the mixture out of the bowl and pop into a plastic bag - leave in the fridge for an hour or so until the dough hardens up or freeze immediately. Cut off chunks of dough, then roll them into long sausage/worm shapes. Take a knife and cut the sausage into small pieces (about the size of a small cherry). Roll them into little balls. Place them on a baking tray (I always use baking paper for easy clean up) and pop them into a warm oven - 200c/400f. Bake them for about 10-12 minutes until they look dry and are beginning to turn a pale golden brown. And then find a friend and play the Mus ("mouse") game!
I have Pebernodder spices that I bought last time I visited my sister because she couldn't remember what was in them and couldn't find her recipe!! I might make her some and send them to her! She likes the little desk flags, so I'm trying to source a desk flag that has a Danish and a UK flag for her. I also have a garland of little wooden Danish flags on a string that I hang on my Christmas tree....would be nice to get Union Jack ones! I got back from my choir concert, and I feel a little wired, might clean the kitchen a little. I managed to pick up my medication today at the pharmacy. It's 25 degrees Fahrenheit right now. I don't want to go out until my friend picks me up, and we're going to a holiday party for lunch.. I like pre-made cookie dough to bake.
I love butter too. Is there a difference in Danish butter and the British butter? You mentioned in on of your videos that you specially liked Danish butter.

I'm sure Diane has more experience in this department.... but in my experience here in Australia, Danish butter (and we do have a couple of Danish brands) is far more creamier and is higher in lactose... So when baking you are guaranteed a much richer taste and fuller flavour in your cakes and biscuits! My mum.. an avid baker... always insists on spending the extra money on Danish butter for her baking .. swears by it! I've tried going with cheaper normal butter... but mother always knows best... and I'm now convinced Danish is better! :)
I love the Dutch pepper nuts (pepernoten) from the store, and have never been able to duplicate the crispness and taste when I bake them myself. How do your home baked ones compare to the store bought ones?

RECIPE You’ll need:
