I made a comment asking about a recipe I've wanted to try with wild game. Moose Braciole, so was wondering if you checked out the Italian cooking channel I mentioned, then holler back, and maybe see how you would approach this particular recipe, so I know how to go about trying it with Moose or Wild Boar, as opposed to Beef or Pork.
So hopefully I can give it a try. Something a little different.

yes i cover the fire with tin to keep the flames from cooking the meat.your not susposed to store smoke meat/dry meat in a garbage bag but its all i had at the time its best to store in a paper bag or a potato sack.

i store it in a potato sack the longest i ever had any stored was a month and a bit gets eating really fast so not too sure on how long its shelf life is!

Happy to see another video Andrew. Thanks! I always text my sons everytime you post another. The kids got four wild turkeys here in Maine this year and I made turkey jerky with Jerk seasoning we brought back from Jamaica this winter out of all of them. One batch I cooked too much so I know what you mean about that. The rest was awesome. Plaining on making a shack like yours in the near future. Thanks for the advice.. Heading to Northern Maine tomorrow camping for the weekend.

You mention makin a new larger smokehouse; but I wonder if you could not use the one you have more efficiently. Could you build hinged rackks with screen on each side and perhaps make them hanging on hooks so they could be removed when you want to examine or adjust meat in them. Just slanting the racks would give you more areaa and perhaps let you add another shelf. Racks with thicker cuts could be left in longer.
