Grate five of them into the spice paste. You should be able to find them at an Indonesian grocer - Bakulan in Daw Park seems to be the local hotspot for Adelaide. (And while you're there, if you get more inspo for Indo recipes, thank me later :D)
We mostly have cream only in Indonesia unless you buy the milk fresh from the market. The cream is far thicker and fattier so I usually use half or two thirds of the amount required and add water or stock & blend it to keep the volume.
I can't get half of these ingredients here in Greece but I watched it all just for the algorithm 😁😁. It looks delicious and I'm going to modify it just to get the beef looking like that. Thank you!

Pro tip - roll up the lime leaves together into a bundle to quickly easily slice them all super fine at the same time

You can use chicken thighs as well, but they need less cooking time.

Lemongrass is easy to grow in pots and would work well in Greece if you can get a hold of some. It smells great and repels insects as well.
