    Made this last night, But , I put 1 mug of water in and that was more than enough (for me) Mrs was very happy with it , she was asking evey 5 mins when it will be ready! I'll be trying some others very soon. Cheers Cullum

    Excellent!! Just a small point, when I make my curries, I always split the cardamom pods with the back of a knife thus releasing more of its flavour!

    Made this last night, having already made your Korma and meat curry from your excellent cookbook. Turned out amazing once again. Love your twist on technique, like with the tomatoes and using quite a lot of water. Watching the sauce thicken and come together towards the end is subliminal man!

    How would you do this same curry if you already have pre cooked chicked (tikka, tandoori etc) I guess you don't add the chicken at the same time as you do because of the flavours? Thanks

      You don't have to take it out, but if you want to, I would take it out after simmering it with the chicken for the first 10-12 minutes.

    For the uninitiated, why does the garam masala go in later then the other spices?

      You may add it along with other masalas but if you need that extra punch of raw garam masala you add a bit at last. Its not mandatory.

      Because he thinks it's healthier and he has no clue how bad vegetable oils are, also , the change fron ghee to vegetable oils has not been good for the average Indians general health

      Hey, they are measuring cups and can be bought from any supermarket. Each one of them grey cups is 4 tbsp, 60 ml.

      I recommend not using chicken breast as it’s dry. But if you do, use a mix of thighs and breast. And add around 10 tbsp of oil

      Reduction isn't simply removing water, it helps to lose any off flavours from volatiles, especially useful when making stock.
      In this case I think it's also about caramalisation. If you start with all the water in at once it's going to take longer to reduce down to the right consistency for this to happen, and you would still need to add back in once it's ready for it anyway.

      @baghiballsakh82 reduction is nothing more than simmering away some of the water in whatever liquid you're using so that what remains is the flavorful non-water part. This gives you the flavor without all of the volume. Adding water reduces the flavour. Your reply is incorrect. Don't believe me google it

      You can reduce this if you want!!! It serves 4, so everyone can have some masala to enjoy. You can always just at 350-400ml if you wanted, or just reduce it down further. It’s preference.
