Being here early enough for the video to still be in only 360p creates a sort of nostalgic feel...also being here before a thumbnail was generated is wild too! Love seeing this process in action.
Just an idea but see if Rocket makes a four hole steam tip? That might make a difference and improve your eggs texture. Neat idea! I can't wait to try this! Thanks for sharing! 👍🏼

That said, I used a machine that has a plastic tube on the end of the wand, and it did fill up with egg, which then got stuck in it. It took quite some time and effort to get it clean again.

Unfortunately, I don't drink coffee (weird for an ex-barista!), so I haven't made one since. I encourage everyone who has an espresso machine to try it!
+1 for go pro joy. Tried this today, results were eggscellent. Think about adding sauteed green pepper, onion, and ham. The breakfast sandwich is a great way to use these eggs.
In my humble opinion, a slice of cheddar melts decently enough. Not as well at American but I think the taste is much better that it’s worth it. That’s the only tweak I’d make but I want to try this! Thanks for the idea
@@snowstrobe That's a foreign term and English is prety weird about appropriating those, especially around food. This will end with a dichotomy where the same term (huevos de vapor) will mean both "steamed eggs" (if you speak Spanish) and "eggs steamed specifically with an espresso wand" (if you speak English). Just like the word "queso", that simply means cheese in Spanish, is used in English to refer to a specifich cheese and chilli sauce. Or how the word "salsa" (simply "sauce" in Spanish) is used to refer to specific latin-american sauces.
Why there's not a restaurant doing this is a mystery. They can cook an egg in less than a minute in the cup they'd serve to the customer and if they do a breakfast sammy, the egg comes out fluffy and soft and not rubbery like you get at many breakfast places. It seems like a no brainer for someone to do this.
There is a restaurant in Salamina, Columbia that has been doing this for a very long time and is likely what inspired these videos. There's also restaurant in Chicago as well that claims to have been doing this for 50 years.
I use a cafelat robot to make espresso so I don't do steamed milk, but maybe I should pick up a cheap delonghi from goodwill to make steamed milk & steamed eggs
For those who can’t afford an espresso machine… you can achieve something very similar in the microwave by beating water into your eggs and checking them every 20 seconds

Cafe Rococo (now Thruline Coffee) in Kirkland did this for their egg sandwiches. It was definitely something I looked forward to when I went there.
