lately, i've been using my dutch oven a LOT, and it's so easy to clean! i have a cuisinart one which was a gift, but if/when this thing starts cracking, i'm definitely getting a le creuset which i will expect to last a lifetime.
Yes! you can keep this for 5+ days or freeze it. I keep it loosely wrapped in parchment paper in my bread cupboard and don't have issues for ~5 days. of course, fresh baked tastes the best, but toasting it works brilliantly for the day-old+ bread.
Which city do you live in TX? I live in NYC, and looking for next city to live to reduce my rent, lol. I remember you mentioned you lived in NYC and worked in the finance industry. I am the same, so wanted to know your thought on moving, and how do you like TX. Much thanks!
I don't know where you could still get yeast. I'm in California and I searched high and low, no yeast of any kind. it looks like a great recipe though.

lots of trade offs so weigh options and test things out. it's not like any decision is permanent.

i recommend almond flour. wheat is bad for your health. i read about it in wheat belly.
I don’t have gluten issues but my friend has made a very similar bread with gluten free flours! Same idea
