  • Key lime pie is the perfect summer dessert. It’s light, it’s creamy, and it’s one of my all-time favorites.
    When it comes to baking anything, patience is required and it’s the same with this key lime pie because after only really 30 minutes of it coming together you need to wait until it completely cools in the refrigerator before eating it.

    Ingredients for this Key Lime Pie Recipe:
    For the Crust:
    • 1 ½ cups of graham cracker crumbs
    • 5 tablespoons of unsalted melted butter
    • 2 tablespoons of sugar
    • pinch of sea salt
    For the Pie:
    • 6 egg yolks
    • 28 ounces of condensed sweetened milk
    • ½ cup of fresh key lime juice
    • 1 tablespoon of key lime zest
    • 2 cups heavy whipping cream
    • ½ cup sugar
    • 1 teaspoon vanilla
    For the Raspberry Sauce
    • 2 cups fresh raspberries
    • juice of ½ lemon
    • 3 tablespoons sugar
    • 2 tablespoons water
    Serves 8
    Prep Time: 20 minutes
    Cook Time: 25 minutes
    Cool Time: 3 hours
    Procedures:
    1. Preheat the oven to 325°.
    2. Add the graham crackers, butter, sugar and salt to a food processor and pulse on high speed until combined.
    3. Transfer the mixture to a 9” or 10” pan and form it completely to the pan.
    4. Par bake at 325° for 10 to 12 minutes or until lightly browned and slightly firm. Cool to room temperature.
    5. Add the egg yolks to a stand mixer with the whisk attachment and whisk on high speed for 2 to 4 minutes until light and fluffy.
    6. Next, on medium speed mix in the milk, key lime juice and zest just until combined.
    7. Transfer the mixture to the cooled pie crust and pour it in. Bake at 350° for 15 minutes just until set.
    8. Cool at room temperature for 15 minutes than transfer the pie and completely cool in the refrigerator for 3 hours or until firm.
    9. While the pie is cooling add heavy cream, sugar and vanilla to a stand mixer with the whisk attachment and mix on high speed until stiff peaks are formed, about 3 to 4 minutes. Add to a piping bag or keep in bowl and chill.
    10. Raspberry sauce: Add all ingredients to a small size pot over medium heat and cook for until thick and jammy, about 15 minutes. Strain and chill.
    11. Garnish the pie with the whipped cream and serve with raspberry sauce.
    CHEF TIPS:
    • You can use either whole graham crackers or graham cracker crumbs when making the crust.
    • Either size pie pan is fine as there will be enough to jam pack a 9” or comfortably fill up a 10”.
    • Use the back side of a spoon to help pack the crust into the pie pan.
    • Be sure to mix in the condensed milk, zest and juice just until combined, no need to over mix.
    • If using a 9” pie pan you can simply add the leftover ½ cup of batter to a ramekin and bake and chill and top of with graham cracker crumbs to make a fun single serving key lime dessert.

    Moms bought me a Kitchen Aid for Christmas and I used it for the first time tonight making this. Dude....I made the raspberry sauce too and it’s so good.
    Like had to come back and comment good. Cranston’s performance in Breaking Bad good.
    I hate to toot my own horn but with your instruction I totally nailed it.
    I’m going to feed it to the wife tomorrow and then closed eyed and grinning, bask in her praises.

    I juice all my key limes today and will make the pie tomorrow. I just rewatched this video and now I’m afraid I may have juiced my limes before they ripened properly, a bit greener than yours. I hope it turns out. Also forgot to save some zest to add to the filling. If I don’t succeed on this first pie, I will try again.

    This looks absolutely amazing but I do have one question. In your description box you say to include 2 cups of heavy whipping cream in the filling but I can’t seem to find where you added it in the video . So do I include the heavy whipping cream or not?

    Made a dozen different Key Lime pies from a dozen different recipes and never liked any of them. Until this one. The egg yolks create a depth that is missing in other recipes and the level of lime juice is perfect (most recipes are far too tart).Just a killer pie that will have every guest at your next cookout coming up to ask you who made it. Feels pretty great to tell them it was you. I don't use the raspberry sauce which seems a distraction from how great this is.
    I've since tweaked the recipe splitting the condensed milk with half coconut condensed milk, added 1 tablespoon fresh grated ginger and use dark brown sugar in the crust. Not sure if it's necessarily better than the original , but it sure ain't worse.

    Can this pie be made without the eggs? HONESLTY THIS IS THE ONLY DESERT I WANT TO TRY(most contain eggs). I love love lime..but I am allergic to eggs and I soooo want to make a key lime pie that doesn't take like plastic.

    The only puzzlement this excellent recipe gives me is this: why put lemon juice in the raspberry sauce for a lime pie? Surely lime juice is called for, if any is at all needed. When I make a raspberry sauce the raspberries have a strong enough pure flavour to not require any assistance from any citrus juice.

    I'm pleased you stain your juice. I do that if I'm squeezing lemons lime oranges any citrus juice and I do it in a citrus squeezed not through my hands as I do not like pips or pulp and always have cuts on my hands ow

    Another way to separate egg whites from yolk is to crack an egg on a saucer, put a glass over the yolk, and pour the white into another container. My mum taught me this. But she never did crack and use the eggshells like you did

    If I wanted to make this pie and whipped topping a day ahead, will the cream be ok or should I stabilize the cream with gelatin. I’ve always made the topping right before I served it. In your experience, how long after you whip the cream can it sit in the refrigerators?

    Watching the video and checking out the limes on the little Key Lime tree I have in a pot on my porch. Restaurants like a garnish for portioning but I serve it plain with the whipped cream on the side to balance the variable strength of the fresh key lime juice.
    Looks good.

    So I tried this recipe and it was a great success. I love it. However I like my pie a little more tart. Should I add more lime juice or reduce the amount of condensed milk? Or both? Keep up the good work. I love your channel and recipes.

      You could add a bit more juice, and depending how much you may need another egg yolk to help hold it together

    Good video....clear and simple instructions to follow!! Two questions: 1. can I use frozen blueberries to make the drizzle? and 2. Typically when I eat restaurant key lime pie it is VERY sweet. Is the recipe overbearingly sweet? if yes, is there anything I can do about it? THANKS!!

    Well we had a hankering for key lime pie and your recipe looked the best to me. I think my coloring of the filling is a bit more yellow, but I used farm fresh eggs. The yolk was a deeper yellow color. I did take a lick of the whisk and the flavor is out of this world delicious. It's in the oven for the setting of the pie and we will have it with tonight's supper. Thank you for sharing your knowledge and recipe!

    I'm having serious issues with the whipping cream. I'm using the exact same amount as he said and it's not getting as thick as his.

      Keep whipping! And you’re using heavy whipping cream correct??

      Whisk on medium, not high, with very cold cream, and if possible put the bowl on the fridge for some time as well. Make sure the bowl is perfectly clean.
      Also consider adding the sugar slowly instead of dumping it all in the beginning.
      I usually get nice whipped cream without bothering with all that, but if you're having trouble this is probably why

    Beautiful.. Definitely do it for next dinner party.. Going to make his beignet recipe now.. Got distracted..
    I don't like the taste of fruit cooked for sauces.. So I make a a hot thick sugar syrup.. Take it off the heat then stir.. Mash..the fruit through it (blitz in certain cases) and sieve.. Feels really fresh this way.. Just my preference

    All the time I have problem with the butter in crust should I measure it before or after Melting in this recipe or in no bake cheesecake 😭😭😭
    Coz mine become like a rock when I made long time no bake cheesecake 😭😭

    The cup of sweetened condensed milk shows 2.5 cups 20 oz but when you poor it in it says 28 oz which is 3 1/4 cups. Not sure which to go off

    I've only got a convection oven that doesnt seem to be very consistent. Any tips on how to tell when your pie has cooked through enough? My last attempt didn't set and I suspect it didn't cook through properly.
