5-Minute Pasta Aglio E Olio: www.bingingwithbabish.com/rec...
50-Minute Fettuccine Alfredo:
FRESH FETTUCCINE:
3 large eggs, beaten to blend
2 cups all-purpose flour, plus more for dusting
1 splash olive oil
1 pinch salt
1. Mix flour, eggs, olive oil, and salt with a fork or a bench scraper.
2. Knead until smooth, roughly 10 minutes, or use a dough hook attachment in a stand mixer to knead until smooth.
3. Cover with plastic wrap and rest for 30 minutes at room temperature.
4. Cut into quarters, then roll out with a flour-dusted rolling pin.
5. Run through a pasta machine, starting at a 0 setting and incrementing up to a 6 or a 7 setting, cutting the sheet in half if the pasta gets long.
6. Switch to a fettuccine cutting attachment and run the pasta sheets through. Dust noodles with flour, twist into nests, and cover until ready to cook.

i like how the more time it takes to cook food, the more exotic the ingredients are.
Made fresh pasta for the first time earlier this year. Hand kneading is not for the weak, it took me 18 minutes to get to a point where the dough bounced back but after that, I was pretty happy with the results!

Honsetly after I've done that aglio e olio dish a few times I reduced the time I need to the time the water needs to boil and cook the noodles plus 2-3 minutes for the final result which is a pretty good time I guess.

Made the 5 minute pasta with a few changes! Sauteed some bite size chicken pieces ahead of time, let the pan cool a bit before I started the olive oil and garlic. Used about half and half parsley and basil (ended up with closer to 1/3 - 1/2 cup but who's counting?) and definitely added cracked pepper at the end! Huge hit!

You tried, and as an Italian you made the Alfredo recipe more interesting to an italian. You made it look less gross than it seems usually. BUT
You can’t throw parsley and lemon in a AGLIO E OLIO. If you do, you can’t call it aglio e olio anymore. Aglio e olio is that simple: garlic, oil and chilli pepper. You can’t make it simpler.
a lot of times it is garnished with parsley. no excuses for the lemon though. or the alfredo.

Even cooking just the pasta takes more than 5 minutes. I thought maybe they meant active time, except they don't because the 5 hour pasta is probably less active time than the 50 minute pasta.

Fresh egg pasta could take from 2 to 5 mins.
Dryed pasta (usually hard wheat) could take 3 to 15 mins. (Spaghetti takes about 12-13 mins, or stuffed pasta like tortellini takes about 3-5)
Complex dishes could take up to 1h of cooking (like lasagna)

Oh my gosh, two of my favourite cooks who I never thought would colab!
When my mom makes sauce, she simmers it for more like 8 hours. She's a stay at home mom, so while my siblings and I are at school, she usually makes a huge pot of sauce about once or twice a month that will get around 4 meals out of it for 8 people... so around 32 servings of sauce, not counting leftovers. We eat pasta a LOT.

Personally I feel the 1 hour one is more challenging. The 5 hour is more due to the simmer being long, but mostly you just wait. The 1hr is the only one where you make the pasta yourself and... I dunno if I can get that right, ever.
