Mate I’ve had 3 MK5 GTi’s and everything you gone through is so common on these. I had to change the thermostat housing on mine (pain in the ****) mine has the S3 high pressure fuel pump fitted along with Highbrid Turbo technics K3. Had to change the gear linkages as really common fault. I think you’re going to have some fun getting that sorted, and looking forward to seeing more on it. 👍🏼
I paint my own stuff, but I have fixed both wings, rusting at exactly the same spot. The cheapest option would be to get second hand wings, they rust at the top of the arch due to the foam pad behind it (for dampening/sound proofing). My VW specialist told me to trim off the pad about 1cm away from the arch so that water won't gather. 'apparently' this was also the fix suggested by VW. I refurbished my Mk5 about 3 years ago and since I've fixed the pad, I've not had any rust come back. But then I did grind everything back, epoxy the living daylights out of it (front and back) and then put thick clear coat on it (ie, and overkill fix!)
nice honest walk around,shame the last body shop did'nt spend enough prep time or have their gun setup correct for laying down the clearcoat

The larger 18mm bolt on the rear consoles bushes allow for so much castor movement which will probably explain the differing wheel positions

@@kerbsidemobilemechanic VW say you should put a special pin in the 18mm hole when you remove that bolt to avoid it moving too much

I would go the whole hog and replace that near side wing. No good spending on paint for the rot to come back.
I think I may be of the same thinking unless body shop can cut it out and put a new bit of metal in but then that’s just more work
