what i love about Chef John is that even though i think i have been watching him for a decade, he still have tricks i have not learned (referring to breaking that membrane)
Wow, I've been thinning my whites with a fork for as long as I can remember. I did it because i wanted the whites cooked completely - no runny stuff around the yolk. Good to see someone else doing it.
@@Ethelgiggle honestly me too I used to just flip em over and found out about the covering it so the steam could cook it but never thought to cut the white lol
I've never like fried eggs with crispy bottoms and edges. For me the texture reminds me of thin crunchy plastic. Give me a gently cooked over easy egg every day of the week.
@@Koji-888 Not a super fan of fried eggs. If I had a fried egg sandwich I would peel the crispy plastic edges off the egg, then it was edible. I would actually prefer an over medium egg in a sandwich or burger. It's the texture of the egg shown in the video I can't stand.
@@Koji-888'Over easy' is also a fried egg. You can fry eggs in all manner of ways. My favourite is to fry in butter on a low temp, then flip for the final 30 seconds. The only browning comes from the butter and it's, frankly, delicious
This might be the first time I've EVER seen someone use a metal utensil in a non-stick pan without cringing. The one non-stick pan that I own is known as the "egg pan" because it just makes some egg things much more foolproof. (YES I know that you can do everything with stainless and cast iron/carbon but sometimes I'm hungover and my egg game is not on point. Don't @ me.)
@@justruthie5365 Yup for me a fried egg should have pure white albumen that's just set firm & a runny yolk. Crunchy bits get stuck in your teeth & are just off-putting. 🍳
Not to tell Chef John how to cook but the pan and seasoning of the pan to non stick is EXTREMELY Important. I have an entire video folder saved of Chef John videos and think of him every time I pull out my cayenne jar
Don't use metal utensils on non stick pans my friends! A plastic or rubber spatula is the tool for the job and won't mark up and release those funky nonstick chemicals into your food . 😊👍
Now science says nonstick anyway releases chemicals, no matter what you do. Better learn to use seasoned cast iron or steel if you want a chemical free fried egg.
@@NIKOLITA4686They mean use the shell to break the edge of the white membrane, not use the shell in the food itself. When you break the egg and drop it into the pan, _use the shell to break the white membrane (rather than using a metal fork in a non-stick pan), then discard the shell as usual and cook the egg as usual._
Honestly I saw this around 5 months ago and tried this trick, literally best egg hack I’ve ever learned. Still use it every single time I fry an egg unless it’s for multiple people (then I just cover with a lid)

So glad Chef John is getting into the Shorts game so that more people can discover his wholesome cooking lessons

I can’t abide a runny egg white, either! 😩
@@Ethelgiggle honestly me too I used to just flip em over and found out about the covering it so the steam could cook it but never thought to cut the white lol
Never tried it before but I definitely will now! It just makes so much sense to even out the albumin to distribute the heat better
I never knew I could do that! I'd flip them but the yolk would break. I'd cover them and accidentally cook the yolk. Can't wait to try this.
I totally agree about disrupting the white! It's so key for getting a balanced consistency across the entire egg!
That brown crispy part of the egg grosses me out when I eat it
Evenly burned
Christy parts, the best part! LOL 😂Excellent idea, thank you.
You just put a lid on so that the top will heat up too.
I've never like fried eggs with crispy bottoms and edges. For me the texture reminds me of thin crunchy plastic. Give me a gently cooked over easy egg every day of the week.
But this is called a “fried egg”. Over easy is soft whites. Soft yolk too

All of the Chef John content I know and love somehow condensed to a single minute. The world will never be the same.
I love it when eggs are brown and crisp at the edges with runny yolks :)
How have I been watching food content for a decade now and have never seen anyone do this before??? It’s perfect!!!
This guy is the best there is
Chef John never fails to teach me something new.
Looks delicious. Love a browned bottom with a runny yolk.
With some toast :)
Yuck. I dont like crunchy fried eggs.
That sounds kinky. I'm here for it!
To me crunchy egg is burnt egg. But to each their own.

Looks absolutely wonderful and delicious and well done just like you always do you cook things ever so perfectly
That's a great technique. Going to use it.
I'm so impressed with your creativity.
Yess, been doing this for years! I hate the thicker white around the yolk that has a slimy texture. Ruins the whole egg unless you overcook the yolk
😮 oooo, some rice and kimchi with that fried egg 🍳 😋
I still like to add a bit of water, cover, and steam the top until it’s just translucent.
This looks good but then it tastes a bit like a steamed egg
same
you can combine the two methods, i always do this trick and have for years, if it still needs more on top then the lid goes on!
Instead of a lid you can use your plate… just wipe the condensation off the plate.
As a bonus your plate is heated.
@@realrasher great idea!
great tip with evening out the egg white, I have never thought of that! Thanks!

This actually works really well now on I’m going to use a spoon to break the white and make it cook through
Nice tip! Also, covering the pan cooks that membrane.
Whith spinkles of water on the pan for some
Nothing worse than a snotty top to the yolk.
Very helpful video, i cooked a few eggs after watching this and they turned out pretty good
Literally the best chef I've seen on UA-cam

I use stainless steel and cast iron. if you season them proper, they become nonstick and work very well. Plus the flavor is much much better.
Way cool technique for centering the egg and balancing the white!
Way to go John!
Chef John is doing the lord's work.
This worked! Thank you Chef J!
Thanks Chef.
I never knew this!! Thank you!! 😮❤
I just brown my edges. Crispy edges.
And the yolk.. a tiny bit more cooked. - Still runny. (gooey) 🌸
Try flicking some water on the pan then cover it. The light steam with slightly cook the top a tad bit in short time
10/4 Good Buddy. My dad taught me to make brown edges around the egg. One moment of just a very few he taught me...😔

Love when people are "teaching" and start out doing something like running a metal spoon over a non stick pan. Brilliant
Yeah....mess up that non-stick coating. 😂😂
Yesss i just rewatched Chef John's shorts the other day and was hoping that he would make more soon! My food wishes have been answered

I love the white breaking idea. I'll have to do that today!
Use the rounded bit of shell you've got from cracking the egg. It's quicker and there's no risk of damaging the pan.
Never use the shell - risk getting salmonella...

I know many say that eggs should be fried over low heat ... but I like medium high ... I like the bottom and edges lacy and crispy
Truth!
I like crispy, but I'll usually do that with a lot of oil. Excited to try this approach now!
Both ways are good IMO. Softer is a more European style and the crispy bottom I saw all the time in Asia.
