Stuffed sweet potatoes for breakfast, butter chicken with cauliflower rice for lunch, and acorn squash recipes for dinner using the easiest pulled pork recipe ever!     Pulled Pork:
    3-4lb boneless pork butt/shoulder
    salt (about 1 tsp for a 4-5lb pork)
    pepper
    Season pork with salt and pepper. Slow cook on low 8-9 hours (or 4 hours on high.) Shred meat with 2 forks.
    Roasted Acorn Squash:
    3 acorn squash, halved
    drizzle of oil
    salt, to taste
    pepper, to taste
    Cut squash in half and scoop out seeds. Transfer to a lined baking sheet, brush with oil and season, then place face down.
    Roast at 400°F (200°C) for 30-45 minutes until tender.
    Sauteed Kale:
    6 cups kale
    drizzle of oil
    ½ lemon, juiced
    salt, to taste
    pepper, to taste
    Heat oil in a saucepan, add kale, and wilt slightly. Season to taste.
    STUFFED SQUASH
    1½ roasted acorn squash (3 halves)
    ½ of pulled pork
    3-4 Tbsp no sugar BBQ sauce
    1-2 Tbsp whole30 mayo
    ½ of sautéed kale
    Mix pulled pork with BBQ sauce & mayo. Toss together with sautéed kale.
    Store stuffing separately from squash halves until ready to serve.
    Per serving, yields 3:
    469 calories | 26g fat | 32g carbs | 31g protein
    SQUASH SOUP
    1½ roasted acorn squash, flesh removed
    1 Tbsp ghee
    1 cup chopped onion
    2 large carrots, chopped
    2 cloves garlic, chopped
    3 ½ cups chicken broth
    1 cup coconut milk
    ½ tsp nutmeg
    ½ tsp cinnamon
    pinch of salt & pepper
    ½ of sauteed kale
    ½ of pulled pork
    Scoop roasted acorn squash flesh into a bowl.
    In a large saucepan, melt ghee. Add onion, carrot, and garlic and cook until tender, about 5-7 minutes.
    Add squash flesh & chicken broth. Bring to a boil, then simmer 20 minutes.
    Stir in coconut milk and add seasonings
    Transfer to food processor and blend until smooth.
    Stir in ½ of sauteed kale and ½ of pulled pork.
    Store for meal prep.
    Per 2 cup serving, yields 5 servings:
    401 calories | 25g fat | 25g carbs | 20g protein

      Alyssia, at the 7:00 mark, it looks like you put the pork butt in the slow cooker WITHOUT water! Is that right? I didn't know that was even possible. Can you please confirm or correct me?

    Your butter chicken recipe made my husband give up his Indian cooking. His parents are from Kulkata and he said this was the best butter chicken he’s ever had. Thanks for that!!
    Also, I prefer chicken thighs for things with rich sauces too. Flavor and texture is just better.

    I clicked on the link for BB and was shocked the box for $149 is only 9 to 14 lbs of meat so that $16+ to $10+ per pound. I never pay that much for meat. I shop sales and bulk. Just not feasible for me at all.

    I always love your videos but I have a couple questions. My boyfriend is allergic to coconut, not deadly allergic but does get a slight reaction to, and avoids nuts as a whole so he doesn't stumble across a super bad allergy. What can I use in exchange for coconut milk? Also we dont have an instant pot, but we have a slow cooker. Will this work just as well for these recipes/ideas?

      It is, but does not contain the commonly problematic milk proteins, so it is Whole30 approved.

      yay! Butcher box has been amazing! Good Food For Good has a compliant BBQ and ketchup, as does True Made. I haven't tried True Made's BBQ (I am not sure it is compliant) but I prefer their ketchup to everyone else's!

      you can do it in a pot over the stove, but I might cook the chicken separately and then add it to the sauteed veggies.

    I don't think Ghee is non-dairy. It's just clarified butter, isn't it?

      Helen Jennings it’s not technically dairy free, but it is lactose-free, which is the main concern for the whole 30 elimination process.

      Yep. Lactose free, but that's very different from dairy free. But yeah ghee is still a dairy product.

      The milk solids are removed, that is why it is compliant for Whole30. (It is the milk proteins that are often inflammatory). But technically still a dairy product.

      I almost always add avocado! Sometimes raw coconut or coconut chips, and sometimes nuts. Occasionally I cook with coconut milk, too. :)

    I’m no expert but if you can’t find breakfast sausage in the store and the one you end up special ordering just has salt pepper and sage why don’t you just buy ground pork and sage?

    I just made the STUFFED SWEET POTATOES recipe. My thoughts:
    1) the time 45-60 min is to short to make sweet potato done. I think it would be 90 min at least (heat down and up)
    2) 1 sweet potato is enough for 2 adult people and not for breakfast but for dinner
    3) I still have 3 sweet potatoes left so I'll make canoe from these and the flrsh I would also put to the stuffing because to me the stuffing is to meaty

      thanks! In my oven, 45-60 minutes is always perfect for sweet potatoes, if they are medium or small in size. If it's larger, more time is needed. Size and serving size are really dependent on the person so definitely prep enough food for your family-you know what's best for you. I like to eat the stuffing separate from the sweet potato as much as I do on it :)

    I thought I can’t have sweet potatoes because they’re too high carb? Same as bananas?? I always view them as unhealthy now 🤔

      It depends on the diet protocol you are on. If you are cutting out processed sugar and crap sweet potato can be a lifesaver to keep your energy level and maintain your will to live, especially if you do cardio or weight lifting. Banana is generally ok if you don't over do it and pair it with stuff that reduces the blunt hit to your blood sugar.

      theindian mom with Whole30, it is recommended to have some protein at each meal. I believe there is a vegetarian version of Whole30 as well, however.
