CANNING CATASTROPHE (And how it could have been avoided)

  • A couple of days before Christmas, I was canning some chicken and bone broth and we had a serious mishap - one that could have been life changing.
    I don't know why I didn't get hurt worse but I do know what happened - if you're a canner, even if you've been canning for over 30 years like I have, give my story a listen.
    I am so grateful for our Christmas Miracle - but it was sure scary! And it could have just been so so bad!

    Glad you are safe from the incident. It sounds scary … burns are the worst. We look forward to picking berries again next season. 😊

    Interesting take on the weight. I am at 4500 ft elevation. I use the 15 lb weight option on the All American canner and the pressure will climb to 17 lb psi with no worries. How do you depressurize the canner? It sounds like you had the siphoning effect. I don't want to assume but did you let the pressure come down on its own or did you remove the weight and let it vent while still at pressure? And I am truly sorry you were burned. That does suck. I am glad you are okay.
