YAY! Yes you def needed that baguette! (Used to live in France) another pro tip - pour water over the baguette, steam in it in a pot- just heat- and you crisp up the outside and softens the inside!🎉
Usually people say that you don't sear your garlic for more than a minute. If your versions tastes good to you, then that's all you need! Sometimes I set my garlic aside after cooking for a minute and toss it back in before I deglaze. Amazing video as usual.

I went to France for a short trip a few years ago , I found the French people nice and friendly in general , maybe some were a bit impatient but on the whole no problems They do appreciate tourists making an effort to communicate in their language
I visited Paris about 15 years ago and found that the people there were wonderful! When I went into shops they'd start speaking French, I'd try my best very broken French to reply and they'd happily start speaking English. I think most people are inherently good. Hope the rest of your stay in France was beautiful!

I made my own Cajun style escargot from about 35 big snails I gathered while hiking the southern half of the Appalachian Trail almost 30 years ago. I had stopped to recover from a bruised heel and shin splints for a few days, and decided to "chef it up" while I recovered. Yup... it was delicious, and I prepped them for 3 days first to poop themselves empty in a mesh bag hanging over the creek, dipping and washing them in the water every 3 to 6 hours. Boiled them, broke them, cleaned the gut gunk out, keeping only the meat. Trimming the brown leathery edges from it. I washed the meat, fried them in butter with garlic and wild leeks I found. I made a full pound of linguine noodles, saving the boil water for my tomato sauce. (waste NOTHING on the trail) I added a can of evaporated cream and some olive oil then some spices to the frying pan with the already fried snails meat A sauce I prepared in the morning, I made from a small can of concentrated tomato sauce, boiling it on the fire for 5 hours, was added to the creamy meat. I added the fried escargot in butter and cream sauce to the tomato sauce, and used lots of spices. I mixed in some boiled, then fried Solomon's Seal root and some sassafras leaves to thicken it and make it more like gumbo. God, was it good. Tasted a lot like scungilli. A pack of 50 boy scouts with 3 adult leaders walking with them, day-hiked past me and they caught the full scent of the snails frying... they all said "Oh man that smells good! What is it?" I said, "Cleaned and prepared fried snails in olive oil, garlic and leeks." Silence. Then "No thanks..." and they continued walking again. It was funny. More for me. I ate for two days on that dish. Once my shin splints were under control I continued to hike on and got to a campground that allowed us to camp for free up the river and use their facilities. I cleaned all my rinsed out pans with dish soap and walked to town. Bought a 7 pound beef roast, and put it in their wood and charcoal grill, turning the beef and slicing off thin layers of beef and eating them. Turning and skicing, eating. Over and over again. 8 hours later I'd eaten 7 pounds of beef all by myself with nobody to mooch. I cleaned the campground as payment for using theut shower, washing machines and facilities, called my family, then slept for 5 hours. I left at 5 AM to get a jump on the day, as the sun was barely breaking the horizon. I got a 30 mile day in that day and the shin splints stayed gone. One day, as the old man that I am, I wish to hike the Appalachian Trail again, and wish to record and load my experiences of making a second batch of natural woods ground ground snails.
Thank you, my friend, for the new French adventure. A miracle that the Benemérita didn't come to you and took you out of the camping area and cooking snails without bread/baguette. Epic. 😊

So many Americans will never travel to France or anywhere in Europe, so Kudos Mav for broadening your horizons and speaking un petite Francaise along the way, and picking up on the history and culture. French cuisine is the finest in the world!! ❤
Hey Mav, glad you're enjoying France. Those were Murex, just a type of seafood, not escargots (marine mollusk, kind of like perriwinkle or whelks, just a shellfish really). Escargots are from land, the best ones from Bourgogne. Shellfish is best raw with a bit of mustard mayo.
Before i went to France i always tought the Netherlands will be the place i want to live in. Then i went to France just 2 weeks before lockdown and now i call it my home the place i see my future in. I felt in love with it immediately. And all i heard before is completely bs even now i hear some stuff that people be saying and have never been there are just completely squares. Fun fact a lot of french people start to speak english as soon as they hear you saying atleast 2 words in french.

My many years of traveling to Europe in while in the Navy, I found the south of France full of very friendly people. Paris not so much. Once i was traveling from Laharve to Paris with a French Canadian and they didnt like his Canadian French. No plans to return there. Fun video. Mike from Maine

We rented the exact same model car in south of France and we had such a headache returning it, and we didn`t even do anything to the car XD And by the way people are very rude and we will never go back to France, probably they are fine with that.

I`ve had the complete opposite experience. Everyone we met basically refused to speak english. Not a place I would go for a vacation.
