    This looks delicious Dani. I'd use the Air Fryer or the frying pan. Great you shared all ways to finish the cooking of the Cotolette di Melanzane. 👌🇳🇱🙋‍♀🥝

      I'll be honest, I taste tested every version and the air fryer was my favourite! I honestly was expecting the pan fried cotolette di melanzane to taste the best! 💖🙀

      @@BlackCatKitchen The Little Lady cooked it, and I honestly don't know what to call it, but it was almost like an Egg Foo Young patty! It was pretty good!

    Oh my this looks absolutely amazing. A great way to serve up eggplant and can be made as a single serve.
    Have you tried using the recipe using Zucchini? It might be an alternative for those who don't favor eggplant.

      Oooh! I’ve never thought of using zucchini! It just so happens I have a few in the fridge at the moment. Will report back!

      @@BlackCatKitchen I forgot to add, I noticed you used room temperature water in the batter. Was that because you don't need to use ice water as it was going to be crumbed and not deep fried?
      I wonder if using a beer batter would have that much of an effect on the flavour. But then you'd be moving away from the traditional recipe.
