The two of you together when your only source of stress or anxiety is whether the roulade will stay together made me smile. This would be a delicious potato lasagna or a Greek lasagna with lemon zest, oregano, marjoram, hummus or chickpeas, tabouli, Kalamata olives, etc. You both remain in my thoughts and prayers. ❤

I love your take on this recipe Brian. It looks so tasty and I definitely want to make it. I used to make a similar potato roulade to this with roasted pine nuts and salsa verde and a similar plant based ricotta made with walnuts, and macadamia nuts with silken tofu. Mine had thin layers of roasted peppers in it with a chilli and pepper emulsion. That’s perhaps another way that you may want to experiment with in the future. Love you both. Stay strong and keep giving us you magnificent cooking talent. ❤x
I love this recipe, definitely will try it. I believe what will help you is to slice the potatoes the long way. You will end up with a longer “noodle “ to roll. Do everything else the same way, regarding cooking and assembly and rolling up the roulade. 😊

Btw, looking at the way you are rolling the log, it looks like you are starting from the first layer that was put down to the last layer- I think I just need to tell myself that so I won't mess it up and go the wrong direction. Interesting you mentioned it being something like lasagna, because I was thinking that for the sake of mental health I'd compose the layers in a casserole dish using the potato layers in place of pasta. Looks wild 'n crazy!

Do you think adding a bit of fresh basil and spinach in the kale layer would be a good idea? Seriously though I think this idea is just awesome. Nice work! 👍
We never did add any tomato paste to the sausage mixture as it already has sundried tomatoes and we didn't want it to be too gloopy. But you could absolutely add spinach and basil to the kale. I'm sure it would turn out great. 🙂

We did actually experiment with that... it didn't quite turn out as good as the rolled version. But, who knows, you may like it a lot better. 😀 And pre-made meal delivery would be quite the undertaking. But who knows what the future holds.

Yep, I would say I eat it at least once a week if not more. Depends on what I'm craving. In this recipe, the tofu is in the "ricotta" mixture.
