I've made lots of butternut squash soups, and since fall is here, I'm bound to make at least a couple more in the next few months, but I've never added a green apple. It makes total sense and I'm a little embarrassed to say I've never thought of it. Thanks for the tip. I'm still probably just gonna roast mine, though. I like just popping it in the oven and moving it around every once in a while as opposed to babying it on the stovetop. Congrats on the 100K!

Made this today. I doubled the onion, apple, celery and was worried it wouldn't have enough pumpkin flavour but it worked out well. Did the fried seed garnish too, when they pop they really pop! I used three teaspoons of chilli flakes which is probably top limit without it overwhelming the rest of the flavours. Thanks for the recipe!
Made this tonight.. Soooo good, kinda just winged it with the amounts.. put a bit of honey in at the end, you wouldn't know it was there unless you were the one who cooked it but tasted it before and after and it just gave it that little extra layer of flavour.. Freaking spot on! can confirm, AWESOME RECIPE!!
I clicked on your cast iron pan video while looking for something specific and thought oh here we go... another cooking show... some pretty boy who probably thinks he is God's gift to the world... my first reaction was dead wrong. You are another cooking show but you are a good cook. I clicked on your spicy weekday sauce video and you were showing your friends how to cut garlic. Something everyone has shown once or twice but you were so nice and gentle teaching him to slow down and then you showed him what to do at the end of the garlic. It is just practice. I watched this video and I love that you do the short 30 second version of your video and then show us the whole thing. I love that you are honest about what you are doing. The soup doesn't need honey today. You really have to taste it and see for yourself. I love that the video and sounds quality is high end. So many home cooks on youtube... The ones that have been around for years look like they are shot on a point and shoot camera or an older Iphone

Steve, my first impulse was "roast all the veg in the oven--quicker and even browning" but then I thought about the merits or the method demonstrated here. I imagine that the veggies retain a bit more of their I am gratified to be disabused of my previous conceit. It is heartening that you also used the seeds from the squash--a very good ethic. And congrats on the 100k--you have done it the right way!
Thank you! Don’t get me wrong. I roast the veg sometimes too. But sometimes you just don’t want to fuss. Plus I think there is some merit to keeping everything in the pot.

Didnt have the thym, didnt have the sage, i roasted it instead of going for the pots, went for few personal twist with what i had under my hand, and its and amazing recipe, chapeau chef !!
A friend and I were at an Austin cafe had the best butternut soup the waitress said it was made with vanilla yogurt butternut squash maple syrup all spice and chicken broth. Combined in blender and then heated. They served it with a Pistachio Biscotti stick my friend said she could eat a bucket full it was so good.

I’ve been known to lock myself in a room with a fly until one of us comes out alive. I’m a gentle man...but I have no tolerance for flies in the house so I appreciate it. Haha
I had a cheap little single-serving blender. Got a lot of use out of it, until one day I used it to blend something hot, and the seal on the bottom of the pitcher softened. Fortunately it fell apart kind of slowly, rather than spraying hot liquid everywhere.

Great video to spread some high quality food knowledge to the masses. Maybe see if you can score a nice large stick blender from a sponsor? Doesn't have to be a heavy industrial size burr mixer or anything. I use one I got from BB&B to blend dressings, soups, and even hummus
