  • Butternut squash soup is creamy, comforting, and delicious! Roasting the butternut squash is the key to creating a deep, rich flavor (without using any butter or cream). This soup is naturally gluten-free, vegetarian, and can easily be made vegan as well.
    What I love about this butternut squash soup recipe is how the combination of butternut squash and apples create a naturally sweet flavor without using any added sugar (I got that idea from Ina Garten!). This is a simple, healthy recipe you will find yourself coming back to all winter long.

    BUTTERNUT SQUASH SOUP RECIPE
    3 lb. butternut squash peeled, seeded and cut into chunks (about 8 cups)
    2 onions, chopped
    2 apples peeled, seeded, and chopped
    2 tbsp. extra virgin olive oil
    1 tsp. kosher salt
    1/2 tsp. black pepper
    4 cups low sodium organic chicken broth or veggie broth for vegan
    1/2 tsp. curry powder (optional)
    Preheat oven to 425ºF. Divide squash, onions and apples amongst two rimmed baking sheets.
    Drizzle one tablespoon of olive oil over each tray of fruit and veggies and season with salt and pepper. Gently toss all the ingredients together until they all have a light coating of olive oil and seasonings.
    Roast for 30 minutes, flipping halfway through.
    Once the ingredients cool to room temperature put them in the blender (one tray at a time) and add two cups of broth and 1/4 teaspoon curry powder. Blend for 30-60 seconds or until the soup is rich and creamy.
    Pour into a large pot and repeat with the second tray. Warm the soup over medium-high heat until heated through. Adjust the seasonings and enjoy! Makes 6 cups (4-6 servings).
    NOTES
    To store: store this soup in airtight containers in the refrigerator for up to about 5 days.
    To freeze: let the soup completely cool and then transfer it to a freezer-safe container (or multiple containers for meal prep purposes). Freeze for up to about 2 months. Don't forget to add a label with the date.
    To reheat: first, let the soup thaw in the refrigerator, then heat the soup in the microwave or on the stovetop.

    This recipe is so delicious! I added Chile cayenne powder when blending and it gave it the perfect kick for my tastebuds!     I made this today, and it is so good! As I was roasting the vegetables, a friend stopped by and said that the kitchen smelled really good. The only change I made was I added garlic to the roasting pan as I was roasting everything else. Will definitely make this again.

    Thank you for this recipe Dani! I will try your method as I'm sure roasting the squash gives it more flavor depth. I make a quick butternut squash soup by preparing the squash as you did, adding the squash cubes and chopped onion into a pot with chicken stock and simmering until the squash is tender. Cool to room temperature, puree with an immersion blender and add seasonings of my choice. Reheat and serve. This soup also freezes well. It is quick to do!

    I am making this now. I added leeks, carrot & celery just because I had an abundance of them. Keeping mine vegan today. I may do a swirl of coconut milk at the end. We grew butternuts this year. Not on purpose, but used compost soil. Ended up with 4 different kinds of squash. Thanks for the recipe!

    Nice technique -- really like this. I sensed that i wanted mine to be a little creamier so I held off half of the broth while blending and added a pint of cream during the final cooking. I also had a half a Fresno and half a Serenno pepper that I added to the veggie roast. Also my squash was small so I added a couple of sweet potatoes to the roast as well. Turned out very good and keeps well for a 2nd day reheat. Thanks for the vid!

      Oh yes!! I’ve been an avid squash eater since my early 20’s (almost 20 yrs) and I still have not figured out how to properly cut it until this video!

      To make the squash easier to peel and cut, heat it in the microwave for about 5-8 minutes, depending on the size. So much easier to work with that way.

No butternut squash soup for the "fanatical "🤣🤣 I make mine similar to your receipe I just purchased Costco pre cut and peeled organic butternut squash and froze 3 containers of it. I boil my butternut squash and add sweetener and onions and spices. Delicious 😊

    We do a similar family recipe like this. After it’s done cooking we add coconut milk. Rich and creamy with great flavour.

      @@JesusGonzalez-op4wl we make about 4-5 litres of soup at a time and add a 1 litre box of coconut milk as soon as it’s done cooking and stir it in.

    I just cut the squash in half, scoop out the seeds and roast. Once cooled I remove the squash skin. Super easy
