This is a creamy chicken stock based soup with macaroni and parmesan cheese. Not your typical kind of soup today, but a twist on many simple cream based soups of the 1800's. Other than the fact that there is pasta in it, there is nothing Italian about this, but that is what it was called in the book - Milanese.

Congratulations on the foster kids! I think their recipe needs some kind of vegetable(s) for color and vitamins and some herbs to enhance the flavor. It looks like a good soup base.
As with most of these recipes, you could alter it many ways to your liking.

I’ve never heard of “macaroni soup” sounds odd
This one was much different than what I would have called a macaroni soup. The macaroni soup that I grew up with has beef stock, tomatoes, and ground beef in it instead of a cream base like this one.
