  • Maeve O'Meara visits a bakery that cooks Ethiopian injera bread which is used with many spicy stews. Nigerian Kunle Adesua introduces Maeve to a range of African ingredients and then cooks up a delicious one pot jolloff rice dish with tender cubes of fish and vegetables. Chef Bathie Dia from Senegal shares the secrets of his favourite snack - a black-eyed bean patty called akara which he serves with a colourful chilli and capsicum sauce called kosayi.

When I was a child, I was introduced to the Ethiopian version of the children's tale Perseus & Andromeda. Then I was introduced to Ethiopian Coffee, which went global.

MEXICAN food this could of been Mexican food with out the berbere spices...TOMATOES ,CHILIES, MAIZE which translates to corn Native to Mexico. All Native ingredients. With the water problems Maize (corn) was introduce to Africa. It needs less water to harvest than wheat..Other Native ingredients to Mexico Vanilla and Chocolate just to mention a few.... Mexico gift to the Culinary world....

My thoughts exactly. I liked the collection of recipes from across Africa, but it does not sit right with me that other episodes are dedicated to specific countries, not continents.
