- Maeve O'Meara meets up with chef Detlef Haupt, who reveals the essential ingredients in traditional German cooking and later prepares one of his favourite dishes, sauerbraten served with potato dumplings and tasty cabbage. Butcher Stefan Birmilli guides us through German sausages. Michael Vieh cooks a hearty lentil soup traditionally eaten in Autumn in Germany, and later Maeve explores the loaves and pretzels that Germans love.
When I lived in Adelaide back in the mid 90's I lived next door to an elderly german lady (Mrs Stolze). She sort of adopted me as a grandson, actually I referred to myself as her "schwarzer enkel" (black grandson), which we both thought was funny (For context, I have darker skin due having a maori mum and an italian dad, often am mistaken for being aboriginal). I used to do odd jobs for her, I never wanted money for it (happy to help her out), instead she would make me what she called "Hutzelbrut", it was basically a fruit and nut loaf, it's magic. Also she'd always give me jars of sauerkraut (which I love). Her son who lived a couple of suburbs over (Plympton from memory, I was in Glenelg) used to make his own kirsch, wasn't much of a fan but my girlfriend at the time loved it. On the day I was due to leave Adelaide and move back to perth (after a messy breakup), Mrs Stolze gave me a goodbye hamper she put together with all sorts of german stuff (including Hutzelbrut), very sweet gesture. I'm heading to Adelaide later this year, I spoke with her son a couple of months ago, Mrs Stolze is still alive and has invited my wife and I to her 100th birthday, be good to see them again, last saw them in 2014. According to her son she still lives in the same house and still makes sauerkraut and Hutzelbrut. It's magic food

I live in south of Germany and they have something called Besenwirtschaft here. Which basically means broomstick inn. They have plenty of vineyards in this area and usually the wineries open their doors for small spans of times during a month. Hands down the best food ever. Nice wine, home cooked food - käsespätzle ,maultaschen,Schlachteplatte not to mention zwiebelrostbraten. Also superb company. Everyone’s very friendly and talkative after a couple of wines.
Best “authentic german food“ film i have seen. Really looks authentic. And gives the right perspective on it. Except the Sauerkraut stereotype. It is not really that popular in germany (anymore). It was a poor peoples dish in winter.

We had a lady in our street with her name the same too in the 70s growing up in Adelaide in Kensington gardens area a very up class area of Adelaide 😊 she was a lovely lady too ❤️ maybe it's the same old lady

Oh, mustard from Kühne is nowadays considered hot; what a joke. I guess he's getting a bit sponsored here or he slightly lost his touch. Take a mixture of Löwensenf extrascharf and ABB from Düsseldorf. That's the best of hotnes and flavor combined; for mustard that is. If some sweetnes is required, add some bavarian mustard , through. 😉
Anything Kühne is mediocre at best, you're right. The worst name brand mustard is still Bautzner, though. That stuff's hella weak.
We gotta admit that German mustard just ain't that good. If you need proper mustard, buy French.

I'm german and unfortunately i have to say, there's quite too much of all in this dish!

Okay. Maybe this guy just tried to present various types of german food on one plate, but imho it's like an italian cook, who puts noodels and gnocci and tiramisu on a pizza margherita topped with a bolognese sauce! And by the way, pork knuckles, spätzle, sauerkraut, red cabbage and dumplings are not very common in the northern part of germany, which has its own unique dishes.

I've made a google search for the german translation of pork knuckle with applesauce ("Schweinshaxe mit Apfelmus") and got only two (!) hits! ;)

@@smokeymcbeerbong6961 I suppose its some thing about war shortages , Germany couldn't feed itself until they invaded the Channel islands , which by chance had a bumper crop of carrots that year which were appropriated by the German military to help feed the German civilian population , which made the carrot so popular , I may be wrong , but that is my opinion .
They are eating a relatively normal amount of carrots from the looks of it.

I have to be honest, I cannot say I enjoy German meals; all that PORK🤢!!! That beef dish looks fabulous, however!!! But when those folks make desserts...🤗🤗🤗LORDDDDD!!! Now we’re hitting it: DESSERT TIME!!!
The Sauerbraten? Original it was made with horse 🙂👍 If i can get some i still cook it with horsemeat. Its fantastic. 👌🤤
You know, our cuisine is actually diverse. We also have vegetarian and some vegan dishes, if that's what you looking for. Poultry and fush we can do as well.
German food is maybe the absolute worst cuisine in the world, especially given how wealthy and favorable a climate they have, their culture just doesn't place an emphasis on its cuisine
